One 3 1/2- to 4-pound pork loin
1/2 teaspoon garlic powder
1/4 teaspoon ground ginger
1/8 teaspoon dried thyme
Salt and freshly ground black pepper
1 tablespoon cooking oil
2 cups chicken broth
2 tablespoons fresh lemon juice
1 tablespoon soy sauce
3 tablespoons cornstarch

Steps:

  • Trim the visible fat from the loin. If necessary, cut the roast to fit into a 3 1/2-, 4- or 5-quart slow cooker. In a small bowl, combine the garlic powder, ginger, thyme and 1/4 teaspoon pepper. Rub the spice mixture over the entire surface of the loin.
  • In a large skillet, heat the oil over medium to medium-high heat and brown the loin slowly on all sides. Drain off the fat. Transfer the loin to the slow cooker. Combine the chicken broth, lemon juice and soy sauce in a small bowl; pour over the loin. Cover and cook on low for 8 to 10 hours or on high for 4 to 5 hours. When the roast is done, transfer the meat to a serving platter and cover to keep it warm.
  • To make the gravy, pour the juices from the slow cooker into a glass measuring cup. Skim off the fat. Measure 2 cups of liquid, adding water to the juices if necessary to make 2 cups. Transfer the juices to a saucepan, reserving 1/2 cup. Stir the cornstarch into the reserved 1/2 cup of juices until dissolved, then stir into the juices in the saucepan. Heat over medium heat, stirring frequently, until the gravy is thickened and bubbly, 2 to 3 minutes. Cook and stir 2 minutes more. Season the gravy to taste with salt and pepper. Slice the roast and serve it with the gravy.

2 1/2 to 3 1/2 lb boneless pork loin roast, trimmed
1 can (28 oz) Muir Glen™ organic fire-roasted diced tomatoes, drained
1 cup shredded mozzarella cheese (4 oz)
1/4 cup shredded fresh basil leaves

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. Mix beans, onions, bell pepper, Italian seasoning, 1 tablespoon of the oil and 1 teaspoon of the salt in slow cooker.
  • Rub pork loin with remaining 1 tablespoon oil, then rub in remaining 1 teaspoon salt. Heat 12-inch nonstick skillet over medium-high heat. I was in the mood for spaghetti for dinner, but had a pork loin that needed to be used so instead of doing my usual barbecue sauce and pork, I decided to try the spaghetti sauce instead. I was not disappointed. The pork was fork tender and the sauce served over spaghetti was delicious!

2 1/2-3 lbs boneless pork loin
1 medium green pepper (sliced into thin strips)
1 medium onion (sliced thin)
1 (26 ounce) jar spaghetti sauce (I use Ragu extra chunky with mushrooms)
3 tablespoons red wine vinegar
1 tablespoon italian seasoning
2 teaspoons garlic powder
1 teaspoon thyme
1 teaspoon fennel seed
2 bay leaves
salt & pepper

Steps:

  • Place peppers and onions in the bottom of crock pot.
  • Rub pork loin with salt, pepper, Italian Seasoning, garlic powder, Thyme and Fennel seed.
  • Place the pork loin on top of the peppers and onions in crock pot.
  • Pour spaghetti sauce over the pork loin making sure to cover the roast.
  • Pour the red wine vinegar in the spaghetti sauce jar and replace the cover; shake the jar so the vinegar mixes with any sauce left in the jar.
  • Pour the vinegar around the pork loin.
  • Add the two bay leaf.
  • Cook at low setting for 8-10 hours.
  • Remove pork loin and slice and put the slices back into the sauce in the crock pot.
  • Serve with your favorite pasta.

8 ounces fresh mushrooms, sliced (I used 2 4 ounce cans of mushroom stems and pieces)
1/2 medium onion, sliced thin
garlic powder
2 (8 ounce) cans tomato sauce
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon parsley flakes

Steps:

  • Lightly sprinkle each side of pork chop with garlic powder.
  • In a non-stick skillet, brown chops on each side.
  • Combine mushrooms and onions in crock pot.
  • Add browned chops in a single layer over mushroom and onions.
  • In a small bowl, mix together sauce ingredients.
  • Pour over pork.
