1 pound turkey Italian sausage links, casings removed
1 medium sweet red pepper, diced
1 small onion, diced
4 cartons (8 ounces each) egg substitute
1 can (4 ounces) chopped green chilies
1 teaspoon chili powder
10 flour tortillas (8 inches), warmed
1-1/4 cups salsa

Steps:

  • In a nonstick skillet, cook sausage over medium heat until no longer pink; drain. Transfer to a 13-in. x 9-in. baking dish coated with cooking spray. Sprinkle with red pepper and onion. Combine the egg substitute, green chilies and chili powder; pour over sausage mixture., Bake, uncovered, at 350° for 30-35 minutes or until set. Break up sausage mixture with a spoon. 1 small green pepper, finely chopped

2 tablespoons canola oil, divided
5 Kroger® Brand Mild Italian Sausages
1 medium yellow onion, sliced
2 cups Kroger® Brand Mini Sweet Peppers, sliced
¼ cup water
¼ teaspoon kosher salt
⅛ teaspoon freshly ground black pepper
5 flour tortillas, 8 in (20 cm)
2 cups shredded mozzarella cheese
1 tablespoon fresh parsley, for garnish
10 long skewers

Steps:

  • Preheat a gas grill to medium heat.

1 teaspoon olive oil (or other cooking oil)
1/2 red pepper, chopped
1/2 zucchini, chopped
1/2 an avocado, peeled, pitted, and sliced
2 tablespoons green onions, chopped (about two inches worth of a bunch)
1/4 cup cheese, grated (italian-blend is best but most kinds will do. Soy, rice, or lower-fat dairy cheeses can be substitut)
1 chipotle pepper tortilla, 10-inch (I prefer these wraps, but any will do)

Steps:

  • Heat the oil in a non-stick pan on medium heat.
  • For vegetarians, cook the sausage as per package directions (usually microwave).
  • For meat, partially cook the sausage as per package directions or your regular method. This usually means boiling, microwaving, or frying.
