This is a recipe from my father who was from Louisiana and loved his greens with bacon! He ended up being a Navy cook during the war and served a version of this soup on his ship. I add other vegetables such as corn, green beans, squash, etc. This soup is better the second day!!

ITALIAN SAUSAGE & GREENS SOUP

Italian Sausage & Greens Soup image

I always feel so good when I get in a cup or so of vitamin packed greens of some sort. This soup is a great balance of protein and healthy greens. Add a baked sweet potato or some multi grain bread for a balanced meal.

Time 45m

Number Of Ingredients 9

1 Tbsp olive oil
1 lb italian seasoned sausage (can be vegetarian sausage)
1 large onion
3 clove garlic
1 tsp fennel seed
2 bunch greens (mustard, collard, kale)
1 c white wine (i used an oak aged chardonnay)
4 c soup stock (chicken, turkey, or vegetable)
1 pinch sugar or truvia sweetener

Steps:

  • 1. Saute sausage (cut into bite size chunks) in olive oil. This recipe attempts to go low fat, but feel free to add more olive oil or cooking spray if needed.
  • 2. Coarsely chop the onion and garlic, and add to sausage along with the fennel seed. Saute until onion is transparent.
  • 3. Add chopped greens & toss until wilted.
  • 4. Add white wine & soup stock plus more water if needed.
  • 5. Simmer on low heat another 20 minutes or so. Add a pinch of sugar if desired, but not more than a teaspoon or it can get too sweet.
  • 6. Serve with crusty bread or a potato for a healthy balanced meal.

Tips:

  • Choose the Right Sausage: Select high-quality Italian sausage with a flavor profile that complements your taste preferences. Spicy, mild, or sweet Italian sausage can all be used, depending on your desired level of heat.
  • Enhance Flavor with Vegetables: Don't limit yourself to just greens; experiment with a variety of vegetables to add depth and texture to the soup. Onions, carrots, celery, peppers, and tomatoes are all great additions.
  • Use Fresh or Frozen Greens: If using fresh greens, wash and chop them thoroughly before adding them to the soup. Frozen greens can be used as well; just thaw them before adding them to the pot.
  • Simmer for Rich Flavor: Allow the soup to simmer for at least 30 minutes to develop a rich and flavorful broth. Simmering also helps to tenderize the greens and vegetables.
  • Add Pasta or Rice: For a heartier soup, consider adding pasta or rice. Small pasta shapes like ditalini or orzo work well, or you can use long pasta like spaghetti or linguine, broken into smaller pieces. Rice can also be used, such as arborio or long-grain white rice.
  • Season to Taste: Always taste the soup before serving and adjust the seasonings as needed. Add salt, pepper, garlic powder, or other herbs and spices to enhance the flavor.
  • Serve with Crusty Bread: A warm, crusty bread is the perfect accompaniment to Italian sausage and greens soup. It's great for dipping into the flavorful broth and soaking up all the deliciousness.

Conclusion:

Italian sausage and greens soup is a versatile and flavorful dish that can be enjoyed for lunch or dinner. With its combination of savory sausage, tender greens, and a rich broth, it's a hearty and satisfying meal that's perfect for a cold day. Experiment with different types of sausage, vegetables, and seasonings to create a soup that suits your taste preferences. Whether you serve it with crusty bread, pasta, or rice, Italian sausage and greens soup is sure to be a hit with your family and friends.
