EASY ITALIAN SAUSAGE AND PEPPERS
My Mom made these often when I was growing up and I have always loved them! I think this is the most authentic and traditional way to make these.Traditional Sausage and Peppers do NOT have tomato sauce! We always ate them on Italian sub rolls with mustard but you could eat these alone with good crusty bread on the side. This serves 8 and can easily be scaled down or increased depending on how many you want to feed.

Steps:
- Heat the oil in a large pan, over medium heat.
- Add the sausages and cook, turning frequently.
- You want them browned all over and this takes about 10 minutes.
- Add the onions and stir up the browned bits on the bottom of the pan.
- Then after another 2 minutes, add the peppers, garlic, salt, pepper, and dried oregano.
- After lowering the heat cook for another 5-10 minutes until the vegetables are tender and the sausages are cooked through.
Tips:
- Choose high-quality Italian sausage: Look for sausage made with fresh, flavorful pork and a blend of Italian spices. Avoid sausages that are overly processed or contain fillers.
- Slice the sausage thinly: This will help it cook evenly and prevent it from becoming dry.
- Sauté the sausage before adding the peppers: This will help to develop its flavor and prevent it from sticking to the pan.
- Use a variety of peppers: A mix of bell peppers, such as red, yellow, and orange, will add color and flavor to the dish.
- Cook the peppers until they are tender but still have a bit of crunch: Overcooked peppers will be mushy and bland.
- Add a splash of white wine or chicken broth: This will help to deglaze the pan and add extra flavor to the sauce.
- Season the dish to taste: Add salt, pepper, and any other desired seasonings to your liking.
- Serve the sausage and peppers with your favorite sides: Some popular options include pasta, rice, or bread.
Conclusion:
Italian sausage and peppers is a classic dish that is easy to make and always a crowd-pleaser. With its flavorful sausage, colorful peppers, and delicious sauce, this dish is sure to become a favorite in your home. So next time you're looking for a quick and easy weeknight meal, give this recipe a try. You won't be disappointed!
