SAUSAGE STUFFED ONION

Sausage Stuffed Onion image

Provided by Katie Lee Biegel

Categories     side-dish

Time 1h40m

Yield 6 servings

Number Of Ingredients 12

3 medium to large red onions
2 tablespoons extra-virgin olive oil
Kosher salt and freshly cracked black pepper
2 tablespoons unsalted butter, cut into cubes
1 cup white wine
1 pound sweet or spicy Italian sausage, casings removed
1/2 cup panko breadcrumbs
1 tablespoon thyme leaves
3 cloves garlic, minced
1/2 cup grated Parmesan
1/4 cup fresh parsley, chopped
1 cup chicken stock

Steps:

  • Preheat the oven to 400 degrees F. Line a 9-by-13-inch baking dish with foil.
  • Peel the onions and cut them in half along the equator. Cut the bottoms slightly so that the onions can sit cut-side up steadily. Use a spoon or melon baller to scoop the centers out of the onions, leaving about 1/4-inch (or 1 layer of onion) as the shell and reserving the scooped flesh. (The onions should look like little bowls.) Place the hollowed-out onions in the baking dish. Drizzle the olive oil over them and sprinkle with about 1/2 teaspoon each salt and pepper. Roast the onions until they are soft and brown on the tops, about 30 minutes. Let rest until cool enough to handle. (Leave the oven on.)
  • Meanwhile, roughly chop the reserved onion flesh. Melt the butter in a large skillet over medium-high heat. Add the onions to the skillet and cook, stirring occasionally, until the onions start to brown, about 4 minutes. Sprinkle in 1/4 teaspoon each salt and pepper, or more if desired. Reduce the heat to medium and let the onions cook until they are very soft and brown, another 10 to 15 minutes. Pour 1/2 cup wine into the skillet and scrape up any brown bits. Let the wine cook out, then transfer the onions to a large bowl to cool slightly.
  • Add and combine the sausage with the caramelized onions. Mix in the panko, thyme, garlic, half the Parmesan, half the parsley and salt and pepper to taste.
  • Use a 1/2-cup ice cream scoop or measuring cup to add a heaping half cup of the sausage mixture to each roasted onion. They should be mounded; press everything in to keep it together. Pour the stock and remaining 1/2 cup wine into the bottom of the baking dish. Cover the dish with foil and bake for 15 minutes. Remove the onions from the oven, remove the foil, sprinkle the remaining Parmesan on the tops of the onions, then bake until the cheese is melted and browning and the sausage is browned, another 15 minutes. Remove from the oven, then sprinkle with the remaining parsley and serve warm.

ITALIAN SAUSAGE STUFFED SHELLS

Italian Sausage Stuffed Shells image

Believe it or not, I'm not a fan of cheese and try to avoid it whenever possible. So dishes that are stuffed with things like ricotta turn me off. I created this dish as a compromise to my cheese avoidance and my husband's love of Italian food. Serve this with garlic bread and a salad for a wonderful family dinner.

Number Of Ingredients 6

1 teaspoon dried Italian seasoning, plus more for garnish if desired

ITALIAN STUFFED ONIONS

Italian Stuffed Onions image

Adapted substantially from a recipe I found on Huey's website. A great side-dish to roasts, grilled or BBQd meats. Yellow onions (for Americans) or brown onions (for Australians) are probably the most suitable and most flavoursome for this recipe. Be careful not to overcook the onions in step one; the outer rings need to be firm enough to serve as a case for the stuffing. If you end up with too much stuffing - and this will very much depend on the size of your onions! - use the extra stuffing to stuff a tomato.

Time 50m

Yield 8 Italian Stuffed Onions, 6-8 serving(s)

Number Of Ingredients 14

4 medium onions or 4 large onions, peeled
olive oil flavored cooking spray
1 -2 tablespoon butter, preferably unsalted
2 garlic cloves, finely minced (I generally mince onions and garlic in my mini processor as it's so much easier than chopping)
1 large potato, coarsely grated
sea salt, to taste
fresh ground pepper, to taste
1/2 teaspoon thyme or 1/2 teaspoon thyme, to taste
mixed Italian herbs, to taste (optional, your choice, I add a blend of rosemary and sage which I really like)
1 teaspoon lemon juice (optional ( don't add lemon juice if you don't like citrus flavours!)
1 -2 cup baby spinach leaves, chopped (it's okay to include the stems)
125 g freshly grated parmesan cheese
3 large eggs, lightly whipped
2 tablespoons grated fresh parsley

Steps:

  • Preheat oven to 200°C/400°F/6 gas mark.
  • Cook the onions in plenty of rapidly simmering water for about 15 minutes; drain well, cut in half and scoop out about two-thirds of the centre; chop up the inner section of the onions (or mince them in a mini processor) and place the outer rings on a lightly oiled oven tray.
  • Melt the butter in a heavy-bottomed, preferably non-stick, pan; add the onion and garlic and briefly sauté them until they are tender; add the grated potato and cook briefly until the potato has softened and started to crisp; sprinkle with salt, ground pepper and thyme, to taste; and add optional, additional herbs (if using).
  • Add the lemon juice (if using), chopped baby spinach leaves and grated Parmesan and mix well to cool a little.
  • Then add the eggs and mix until the contents of the pan are well-combined, being careful not to scramble the eggs; check the seasoning and adjust if necessary.
  • Spoon the mixture into the onion rings, sprinkle with a little extra grated Parmesan and cook in the oven for about 15 minutes or until the tops are golden.
  • Serve with a sprinkling of parsley on top, as an accompaniment to your favourite grilled or roasted meat dish or BBQd meat.

SAUSAGE-STUFFED RED ONIONS

Sausage-Stuffed Red Onions image

The onions in this dish aren't just for show; the long roasting time brings out their sweetness and makes them delicious in their own right, and they add just the right savory note to the stuffing inside.

Provided by Martha Stewart

Categories     Food & Cooking     Dinner Recipes     Dinner Side Dishes

Time 1h40m

Yield Makes 8

Number Of Ingredients 10

8 small-to-medium red onions
Coarse salt
2 tablespoons unsalted butter
8 ounces sweet Italian sausage
1/3 cup grated tart green apple, such as Granny Smith
1/4 teaspoon fennel seeds
1/2 cup plain dried breadcrumbs
1 tablespoon finely chopped fresh flat-leaf parsley
1 tablespoon finely chopped fresh sage
3/4 cup grated Gruyere cheese (3 ounces)

Steps:

  • Preheat oven to 400 degrees. Slice off tops and bottoms of onions, leaving at least a 2-inch diameter exposed at the top. Scoop out the inside of each onion (about halfway down) using a melon baller or a spoon. Season insides with salt. Transfer onions to a baking dish, and cover with parchment, then foil. Bake until just starting to soften, about 1 hour.
  • Meanwhile, melt butter in a large skillet over medium heat. Crumble sausage into skillet, and cook, stirring, until almost cooked through, about 3 minutes. Add apple and fennel seeds, and cook until sausage is no longer pink, about 2 minutes.
  • Drain sausage mixture, reserving juices in a medium bowl. Finely chop sausage mixture, and add to bowl. Stir in breadcrumbs, parsley, sage, and 1/4 cup Gruyere. Let cool.
  • Fill onions with stuffing (about 3 tablespoons each), then top with remaining 1/2 cup Gruyere. Bake until tops are crisp and brown, about 20 minutes more.

ITALIAN SAUSAGE AND ONIONS

Italian Sausage and Onions image

No peppers here, unless you want to add them. This is a delicious thick mixture of sausage onions and tomatoes. It is perfect for serving in sandwich rolls.

Provided by Recipe Reader

Categories     Poultry

Time 55m

Yield 4 serving(s)

Number Of Ingredients 12

1/8 cup extra virgin olive oil
1 lb sweet Italian turkey sausage
2 sweet onions, sliced
1 teaspoon kosher salt
1 teaspoon ground black pepper
1/2 teaspoon italian seasoning
1/4 cup fresh basil leaf, chopped
4 garlic cloves, chopped
2 tablespoons tomato paste
1 cup marsala wine
1 (15 ounce) can diced tomatoes
1/8-1/4 teaspoon crushed red pepper flakes

Steps:

  • Heat the oil in a large heavy skillet. Add the sausages and cook over medium heat until browned on both sides, about 10 minutes.
  • Remove sausages from pan onto papertowel.
  • In same pan, add onions, salt, and pepper. Cook until golden brown and softened, about 5 minutes.
  • Add Italian seasoning, basil, and garlic. Cook 2 or 3 minutes.
  • Add the tomato paste, stirring to coat the onions, then add the Marsala, tomatoes, and chili flakes. Stir to combine, scaping the bottom of the pan to loosen all the browned bits. Bring to a simmer.
  • Cut the sausages into 1 inch pieces and add to the onion tomato mixture. Stir to combine and simmer until most of the liquid has evaporated and the mixture has thickened, about 30 minutes.

Tips:

  • Choose the right onions: Use medium-sized yellow or white onions for even cooking and to hold the stuffing well.
  • Prepare the onions properly: Cut the onions in half lengthwise, leaving the root end intact to hold the halves together during stuffing and baking.
  • Use high-quality Italian sausage: Choose a flavorful Italian sausage that is not too greasy. Sweet or hot Italian sausage can be used, depending on your preference.
  • Season the sausage stuffing: Add herbs and spices to the sausage stuffing to enhance its flavor. Common seasonings include garlic, onion powder, fennel seeds, parsley, and red pepper flakes.
  • Don't overstuff the onions: Leave some room for the stuffing to expand during baking, or the onions may burst.
  • Bake the onions at a high temperature: This will help to caramelize the onions and create a crispy crust on the sausage stuffing.
  • Serve the onions hot: Stuffed onions are best enjoyed fresh out of the oven. Serve them as a main course or as a side dish.

Conclusion:

Italian sausage stuffed onions are a delicious and hearty dish that is perfect for a casual meal or a special occasion. With its savory sausage stuffing and caramelized onions, this dish is sure to be a hit with your family and friends.
