ITALIAN STYLE GREEN BEANS

This is just a great little recipe, quick and easy, and uses ingredients that I think most people happen to have on hand most of the time. Great for the weight watcher!!

Provided by Robyn Bruce

Categories     Vegetables

Time 15m

Number Of Ingredients 7

1 10 oz. package frozen green beans
1 14 oz. can whole peeled tomatoes, drained and chopped, but don't throw away the juice
1/4 c chopped onion
1/4 tsp garlic powder
1/2 tsp dired oregano
1/2 tsp dried basil
1/8 tsp pepper

Steps:

  • 1. Combine all the ingredients (plus about 3 tablespoons of reserved juice from tomatoes) in a pan and heat to boiling. Then reduce heat.
  • 2. Cover and simmer for 8-10 minutes, or until the beans are done to your liking.

Tips:

  • Selecting the Right Green Beans: Choose fresh, tender green beans that snap easily when bent. Avoid beans that are wilted, bruised, or have yellow or brown spots.
  • Blanching Green Beans: Blanching helps preserve the color and crispness of green beans. Bring a large pot of salted water to a boil, add the green beans, and cook for 2-3 minutes. Immediately transfer the beans to a bowl of ice water to stop the cooking process.
  • Sautéing Green Beans: Heat a large skillet over medium-high heat, add some olive oil or butter, and sauté the green beans until tender-crisp, about 5-7 minutes. Season with salt, pepper, and garlic powder to taste.
  • Steaming Green Beans: Steaming is a gentle cooking method that preserves the nutrients and flavor of green beans. Place the green beans in a steamer basket over a pot of boiling water and steam for 5-7 minutes, or until tender-crisp.
  • Roasting Green Beans: Preheat the oven to 450°F (230°C). Toss the green beans with olive oil, salt, and pepper. Spread the beans in a single layer on a baking sheet and roast for 15-20 minutes, or until tender and slightly charred.

Conclusion:

Green beans are a versatile and delicious vegetable that can be prepared in a variety of ways. Whether you prefer sautéed, steamed, roasted, or blanched, there's a green bean recipe out there to suit your taste. With their vibrant color, crisp texture, and mild flavor, green beans are a great addition to any meal.
