3 tablespoons milk
1 ½ cups Italian seasoned bread crumbs
½ cup grated Parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 cloves garlic, peeled and chopped
4 pork chops

Steps:

  • Preheat oven to 325 degrees F (160 degrees C).
  • In a small bowl, beat together the eggs and milk. In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.

2 medium green peppers, cut into 1/4-inch strips
1/2 pound sliced fresh mushrooms
1 tablespoon plus 1-1/2 teaspoons olive oil, divided
4 boneless pork loin chops (6 ounces each)
3/4 teaspoon salt, divided
3/4 teaspoon pepper, divided
2 cups marinara or spaghetti sauce
1 can (3-1/2 ounces) sliced ripe olives, drained

Steps:

  • In a large skillet, saute peppers and mushrooms in 1 tablespoon oil until tender. Remove and keep warm., Sprinkle chops with 1/4 teaspoon salt and 1/4 teaspoon pepper. 4 boneless pork chops, pounded to ¼ inch
4 -6 cloves garlic, sliced thin
1 large very ripe tomatoes
1/2 cup chicken broth (or more)
1/4 cup olive oil (or more)
1/4 teaspoon red pepper flakes
1/4 cup white wine
1/4 cup chopped parsley
salt and pepper
1/4 cup chopped black olives (optional)
1/4 cup shredded fresh basil (optional)

Steps:

  • Salt and pepper pork and sauté quickly in 3 TB olive oil in hot pan for about 1 min per side...they will not be brown.
  • Remove pork from pan.
  • To same pan add garlic and pepper flakes adding a little more oil if needed.
