SKILLET ITALIAN HERBED COUNTRY POTATOES

Skillet Italian Herbed Country Potatoes image

This is a quick and easy potato side dish, which is my husband's most requested. This recipe can be modified, using many different combinations of herbs and spices, to accompany any meal. The recipe calls for fresh herbs, but one could substitute dried herbs as well. Just remember when using dried herbs, use half the amount called for in a recipe.

Time 50m

Yield 4

Number Of Ingredients 8

4 russet potatoes, scrubbed
3 tablespoons olive oil, divided, or as needed
2 teaspoons salted butter, or to taste
1 medium onion, sliced
3 cloves garlic, minced
salt and ground black pepper to taste
½ cup pitted Kalamata olives, halved
1 tablespoon minced fresh parsley, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Stab the potatoes with a fork and microwave until cooked, about 9 minutes. Let cool, about 10 minutes. Slice into wedges.
  • Heat 1 tablespoon oil and butter in a small pan over medium-low heat. Saute onion and garlic with salt and pepper until tender and sweet, 5 to 7 minutes. Remove from heat.
  • Heat enough remaining oil to coat the bottom of a large nonstick pan over medium-high heat. Cook potatoes in batches, making sure they aren't crowded in the pan. Turn carefully until golden and crispy, 7 to 10 minutes. Keep the first batch in the preheated oven until the second batch is done.
  • Add olives to the second batch and cook for 1 minute. Add potatoes from the oven and onion-garlic mixture. Toss in the pan until everything is heated. Drain on paper towels and sprinkle with parsley, salt, and pepper.

Tips:

  • Choose the right potatoes: Yukon Gold or Russet potatoes are the best choice for skillet potatoes. They hold their shape well and have a creamy texture.
  • Cut the potatoes evenly: This will ensure that they cook evenly. If the potatoes are cut too thick, they will not cook through. If they are cut too thin, they will fall apart.
  • Brown the potatoes before adding the other ingredients: This will give them a crispy exterior and a tender interior.
  • Use a well-seasoned skillet: This will help to prevent the potatoes from sticking. If you don't have a well-seasoned skillet, you can season it by cooking bacon or sausage in it before making the potatoes.
  • Don't overcrowd the skillet: If you overcrowd the skillet, the potatoes will not cook evenly. Cook the potatoes in batches if necessary.
  • Season the potatoes well: Salt, pepper, garlic powder, and onion powder are all good seasonings for skillet potatoes. You can also add other herbs and spices, such as rosemary, thyme, or paprika.
  • Cook the potatoes until they are tender: The potatoes should be tender on the inside and crispy on the outside. This will usually take about 15-20 minutes.

Conclusion:

Skillet potatoes are a delicious and versatile side dish that can be served with a variety of main courses. They are easy to make and can be tailored to your own taste. With a few simple tips, you can make perfect skillet potatoes every time.
