4 tablespoons oil
4 garlic cloves, minced
1 onion, chopped
1 zucchini, sliced
1 (10 ounce) package Italian cut green beans, thawed
1 (14 ounce) can Italian tomatoes, drained & chopped
1 tablespoon italian seasoning
1 (3 ounce) .can ripe olives, sliced

Steps:

  • When oil is hot in wok, stir fry onion, garlic and zucchini 2 minutes or until desired texture. Add green beans, continue until hot, add tomatoes and seasoning and olives, cook until heated through. Serve.

3/4 cup Hidden Valley® Farmhouse Originals Roasted Onion Parmesan Dressing
1 tablespoon prepared horseradish
1 teaspoon Italian seasoning
4 cups each baby spinach and torn romaine lettuce in bite size pieces
8 cups of multicolored, diced, vegetables (such as carrots, fennel, bell peppers, red onion, fingerling or new potatoes, tomatoes)

Steps:

  • Preheat the oven to 450 degrees F.
  • In a small bowl, add the dressing, horseradish, and italian seasoning and stir until well blended.
  • In a large bowl, toss the vegetables with half of the dressing and season with freshly ground pepper. Roast the vegetables on a parchment lined baking sheet for 15 to 20 minutes or until golden. Remove from the oven and let cool slightly.
  • In another bowl, toss the remaining dressing with both the spinach and romaine until well coated.
  • Arrange the salad on a serving plate or platter and top with the roasted vegetables and serve immediately.

1 onion
3 cloves of garlic
Olive oil (lots)
3 carrots
3(ish) potatoes
head of broccoli
2 capsicums
4 tomatoes
cup of red wine
tomato paste
1/3 cup of olives
afew sprigs of rosemary
sprig or two of thyme
handful of parsely (flat-leaf preferably)
salt and pepper to taste

Steps:

  • Chop carrots, potatoes, broccoli, capsicums and tomatoes into medium size pieces and combine in some kind of baking dish. Add a splash of olive oil to a frying pan and heat to a medium-high temp, add chopped onions and garlic (I usually add the garlic afew minutes afew to avoid it burning). Fry for 5-10 mins and combine with other vegetables. Now throw in wine, a good wollop of tomato paste, olives, rosemary and thyme and a large amount of olive (maybe 1/3 to half a cup). Season with a bit of salt and pepper then put in oven (uncovered). My oven has no temperature on it so I couldn't tell you how hot exactly, but its a bit over medium heat. Cook until your potatoes have cooked properly and the sauce has become nice and thick (it should not be soupy). Be sure to take it out and stir from time to time. Remove from oven and mix in a handful of fresh, chopped parsely. Season if need be. Yum!
