ITALIAN WHEAT ROLLS

Italian Wheat Rolls image

These are great-tasting wheat rolls made with olive oil, regular bread flour, and whole wheat flour. This recipe happened one night when I was making white Italian rolls, and I ran out of flour. All I had left was wheat flour, and luckily for me, it worked out well.

Time 1h20m

Yield 24

Number Of Ingredients 9

½ cup olive oil
¼ cup white sugar
1 tablespoon salt
2 cups boiling water
2 (.25 ounce) packages active dry yeast
⅓ cup warm water (110 degrees F/45 degrees C)
2 eggs
2 cups whole wheat flour
4 cups bread flour

Steps:

  • In a small bowl, combine olive oil, white sugar and salt. Add boiling water and stir to dissolve sugar; let cool to lukewarm.
  • In a small bowl, dissolve yeast in warm water. Let stand until creamy, about 10 minutes.
  • When sugar and water mixture has cooled, add yeast mixture, eggs, whole wheat flour and 2 cups bread flour. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
  • Divide the dough into twenty four equal size pieces and form into rounds. Place the rounds on lightly greased baking sheets. Cover the rolls with a damp cloth and let rise until doubled in volume, about 40 minutes. Meanwhile, preheat oven to 350 degrees F (175 degrees C).
  • Bake in preheated oven until golden brown, about 15 to 20 minutes.

I have made these buns many times, there wonderful with a pasta dinner, they bake out beautifully with a crispy light golden crust, you will get 8 large buns with this recipe! If you reside in the U.S. then use all bread flour, Canadian residents may use all-purpose flour --- I most always add in 1-1/2 cups of finely cubed cheddar towards the end of kneading, it really adds flavor to these buns

Yield 8 buns

Number Of Ingredients 7

1 1/2 cups water, divided
1 teaspoon sugar

  • Shape into a ball (the dough will come together nicely after resting).
  • Place into a large greased deep glass bowl.

  • Slice each half into 4 even pieces.
  • Shape each piece into a round ball.

Tips:

  • To ensure soft and fluffy rolls, activate the yeast properly by dissolving it in warm water (105-115°F) with a pinch of sugar. Let it sit until foamy, about 5-10 minutes.
  • Use high-quality bread flour or all-purpose flour for a better rise and texture in your rolls.
  • If you don't have an oven thermometer, you can check the oven temperature by sprinkling a pinch of flour on the oven rack. If it browns within a few seconds, your oven is ready.
  • To achieve a golden-brown crust, brush the rolls with an egg wash (beaten egg mixed with a little water or milk) before baking.
  • Keep an eye on the rolls while they are baking, as ovens can vary. Once they reach the desired color and sound hollow when tapped, they are done.
