1/4 cup olive oil, divided
2 cans (14 ounces each) jackfruit, drained and shredded
2 to 4 chipotle peppers in adobo sauce
2 tablespoons chili powder
1 tablespoon ground cumin
1 tablespoon dried oregano
2 teaspoons granulated garlic
1 teaspoon garlic powder
1 to 2 teaspoons kosher salt
1/2 cup pumpkin seeds or pepitas, toasted
1/4 cup nutritional yeast
12 corn tortillas (6 inches), warmed

  • In a large skillet, cook onions in 2 tablespoons oil over medium-low heat until tender and lightly browned, about 10 minutes. 4 cloves garlic, minced
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon black pepper
¼ teaspoon chili powder
¼ teaspoon ground cumin
¼ teaspoon salt
2 tablespoons olive oil
1 large shallot, minced
¾ cup water
¼ cup orange juice
1 medium lime, juiced
1 chipotle pepper in adobo sauce, minced
2 tablespoons maple syrup
1 teaspoon dried oregano
2 leaf (blank)s bay leaves
salt and ground black pepper to taste
8 (6 inch) corn tortillas, warmed
