My sister-in-law's yummy low fat recipe for chicken chili is wonderful in the fall and winter weather. I like to use chicken thigh instead of breast meat, but that's just personal preference. Cooked chicken from a rotisserie chicken will also work well. Any white beans will do - Jackie prefers navy beans. Canned green chilies may be replaced by 8 oz. of home-roasted Anaheim or Poblano chilies, chopped.

1 lb boneless chicken breast
1 medium onion, chopped
2 garlic cloves, minced
1 tablespoon vegetable oil
2 (15 ounce) cans white beans
1 (15 ounce) can chicken broth
2 (4 ounce) cans chopped green chilies
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dry oregano
1 bay leaf
1/2 teaspoon pepper
1/4 teaspoon cayenne
1 cup sour cream
1/2 cup evaporated milk

Steps:

  • In a large saucepan, saute chicken, onion and garlic, in oil over medium-high heat.
  • Add beans, chicken broth, chilies, and seasoning.
  • Bring to a boil, reduce heat and simmer 30 minutes.
  • Remove from heat, add sour cream and evaporated milk, stir well.
  • Serve immediately.

2 medium onions, chopped
1 Tbsp olive oil
4 garlic cloves, minced
2 cans (4 oz.) chopped green chilies
2 tsp ground cumin
1 tsp dried oregano
1/4 tsp cayenne pepper
1/4 tsp ground cloves
1 can (14-1/2 oz.) chicken broth
4 cups cooked chicken, cubed
3 cans (15-1/2 oz.) Great Northern Beans, drained and rinsed
2 cups (8 oz) shredded Kraft Monterey Jack cheese
Optional garnishes: Breakstone's or Knudsen Sour Cream, sliced jalapeno peppers

Steps:

  • In a 3-quart saucepan, saute onions in oil until tender. Stir in garlic, chilies, cumin, oregano, cayenne and cloves; cook and stir a few more minutes.
