EASY CHEESE JALAPENO BAKED POLENTA (GRITS)

Easy Cheese Jalapeno Baked Polenta (Grits) image

Yield 4 Servings

Number Of Ingredients 8

2 cups quick-cooking grits
2 1/2 cups grated extra-sharp Cheddar
1 stick unsalted butter
1 tablespoon hot sauce (recommended: Tabasco)
3 large eggs, well beaten
2 jalapenos, finely diced
1/4 cup canned chopped green chiles
Garlic salt

Stir well and season with garlic salt, to taste. Pour into a buttered 9-inch baking dish and bake for 1 hour. Let cool slightly before slicing and serving.

Tips:

  • Use fresh jalapenos: Fresh jalapenos have a brighter flavor and more heat than dried or canned jalapenos. If you can, use them whenever possible.
  • Remove the seeds and ribs from the jalapenos: This will help to reduce the heat of the peppers. If you want a milder dish, you can remove more of the seeds and ribs.
  • Use a good quality cheese: The cheese is one of the main ingredients in this dish, so it's important to use a good quality cheese that you enjoy. A sharp cheddar or a Monterey Jack cheese are both good choices.
  • Cook the grits slowly: Grits need to be cooked slowly in order to develop their full flavor. Don't rush the process, or you'll end up with mushy grits.
  • Season the grits to taste: Once the grits are cooked, season them to taste with salt and pepper. You can also add other seasonings, such as garlic powder, onion powder, or cayenne pepper.

Conclusion:

Jalapeno cheese grits are a delicious and easy-to-make dish that is perfect for breakfast, lunch, or dinner. They are also a great way to use up leftover grits. With a few simple tips, you can make the perfect pot of jalapeno cheese grits every time. So next time you're looking for a quick and easy meal, give this recipe a try. You won't be disappointed!
