1 cup all-purpose flour

¼ cup margarine, melted
¼ cup chopped green onions

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

4 whole jalepeno chiles (reduce heat by removing seeds and chop fine)

6 eggs, beaten

1 lb cheddar cheese shredded
1 lb monterey jack cheese shredded
1 lb sharp cheddar shredded
12 oz sliced jalapenos drained (i get the tamed ones at walmart)
1 can(s) evaporated milk (12 oz.)
1 c self rising flour
2 eggs

Steps:

  • 1. Combine all shredded cheeses in a large bowl. Place half of the cheeses in a sprayed 13x9 pan. Layer jalapenos over cheese mixture and then top with remaining cheeses. Beat flour, eggs and evaporated milk til smooth. Spread over cheese mixture. Bake for 40-45 minutes. Let cool for about 20 minutes before cutting.
  • 2. For variations I have added minced onion,crumbled bacon or ham.
