JALAPENO-CORN CASSEROLE
I've had this at potlucks and barbecues. I tend to make it a little hotter, using 2 to 3 jalapenos, but I am a fire-eater! I'm not sure where the recipe originated, but I got it from my friend Lori. I've made a few changes to it due to personal preferences. This recipe is easily halved. Great use for leftover rice....just eliminate step 1 in the directions.

Steps:
- 1. Melt butter and cream cheese in saucepan. Add flour and stir (will be thick) slowly. Add milk and stir until consistency of pudding; add jalapenos. Drain corn and put in casserole dish. Add cream cheese mixture and cover. bake in 350 degree oven for 35 min. or until thicken and bubbly...
Tips:
- For a creamier casserole, use heavy cream instead of milk. Using evaporated milk or half-and-half can also provide a richer texture.
- To add a bit of spice, use a can of diced green chiles instead of jalapenos. Freshly chopped jalapenos can also be used, but be sure to remove the seeds and ribs before chopping to reduce the heat.
- To give your casserole a cheesy flavor, add 1/2 cup of shredded sharp cheddar cheese or Mexican blend cheese to the batter.
- For a Southwestern twist, add a can of black beans or corn to the casserole. Cubed avocado, chopped cilantro, or salsa can also be used as toppings.
- Serve with a dollop of sour cream or guacamole and a side of tortilla chips.
Conclusion:
Jalapeno corn casserole is an easy and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With a few simple ingredients, you can create a delicious and satisfying casserole that is perfect for any occasion. Give this recipe a try and see for yourself how delicious it is!
