4 lbs jalapeno peppers
2 lbs onions
3 cups white vinegar
2 cups sugar
2 tablespoons mustard seeds
2 teaspoons turmeric powder
2 teaspoons celery seeds
1 teaspoon ginger powder

Steps:

  • Thinly slice jalapenos and onions and cold pack into jars. Use rubber gloves for handling jalapenos.
  • Place remaining ingredients in large pan and bring to a boil.
  • Pour hot mixture into jars, over the peppers and onions, leaving 1/4 inch headspace. If you run short of the juice, top with boiling water.
  • Remove air bubbles by running a knife around the inside of the jars. Adjust caps.
  • Process 10-minutes in boiling water bath.
  • Yield: about 5-6 Pints.

4 pounds cucumbers, sliced
5 small onions, sliced
4 jalapeno peppers, sliced and seeded
1/2 cup canning salt
5 cups sugar
4 cups white vinegar
2 tablespoons mustard seed
2 teaspoons celery seed
1-1/2 teaspoons ground turmeric
1/2 teaspoon ground cloves

Steps:

  • In a large container, combine cucumbers, onions, jalapenos and salt. Cover with crushed ice and mix well. Let stand 3 hours. Drain; rinse and drain again., In a Dutch oven, combine sugar, vinegar and seasonings; bring to a boil. Add cucumber mixture; return to a boil. Remove from heat., Carefully ladle hot mixture into seven hot pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 15 minutes. Remove jars and cool.

16 to 20 green jalapeno peppers
3/4 cup white wine vinegar
1/2 cup granulated sugar
1/2 teaspoon whole yellow mustard seeds
1/2 teaspoon whole coriander seeds
1/2 teaspoon whole fennel seeds
1/2 teaspoon black peppercorns
1 bay leaf

Steps:

  • Scrub a 1 quart glass jar and its lid in hot soapy water. Rinse well and air-dry. Wash and dry the jalapenos. Prick each one several times with a fork. Stuff the jar with as many peppers as you can. In a small pot, combine the remaining ingredients with 3/4 cup water. Bring to a boil, reduce the heat, and simmer until the sugar is dissolved, about 5 minutes. Remove from the heat and carefully pour the hot liquid and spices over the jalapenos to almost the top of the jar. (A large-mouthed funnel may be useful here.) Seal the jar tightly with the lid, label with the date of creation, and refrigerate for a minimum of 1 week. The brine becomes spicier over time and makes excellent vinegar for dressings. The peppers can be stored for up to 2 months in the refrigerator.

2 cups red wine vinegar
3/4 cup chunky peanut butter
1/2 cup flour
2 large eggs, beaten well
1 cup fine bread crumbs
Corn oil, for frying

Steps:

  • In a 6-quart saucepan, combine jalapeños, vinegar and 2 cups water and bring to a boil. Reduce heat to low and simmer until jalapeños are tender but not soft, 15 to 20 minutes depending on size. Drain and rinse with cold water. Using a small knife, make a slit along the side of each jalapeño. Keeping jalapeños as intact as possible, carefully remove and discard stems and seeds.
  • Using a blunt knife or small spoon, spread 1 tablespoon peanut butter inside each jalapeño, pressing the opening closed. (Do not overlap edges.)
  • Spread flour in a wide shallow bowl and roll filled jalapeños to coat them well, roll in egg, then roll in bread crumbs. Set aside on a plate.
  • In a large skillet, add enough oil to come about 3/4 inch up the side. Place over medium-high heat until oil is shimmering. Working in batches, fry jalapeños until well browned and crisp on the undersides, 1 to 2 minutes. Turn and brown the other side. Transfer to paper towels to drain. Serve hot.
