Categories     Rice

Time 1h

Yield 8 serving(s)

Number Of Ingredients 9

3 cups jasmine rice
2 teaspoons kosher salt
2 cups shelled peas, blanched
12 green onions, white and green parts, thinly sliced on the bias
2 lemons
1/4 cup chopped of fresh mint
1/4 cup extra-virgin olive oil
kosher salt & freshly ground black pepper
fresh pea tendrils, for garnish (optional)

Steps:

  • Combine the rice and 6 cups of cold water in a pot. Sprinkle in the salt and bring to a boil over medium-high heat. When the liquid comes to a boil, reduce the heat to low and cover. Cook the rice for 20 minutes, without peaking under the lid, the steam is most precious in cooking rice. When the rice has absorbed the water it will form "craters" or holes in the top.
  • Let the rice sit off the heat, undisturbed with the lid on, for at least 5 minutes. This allows the rice to steam, with the bottom layer as fluffy as the top.
  • Fluff the rice with a fork and transfer to a serving bowl. Add the blanched peas, green onions, lemon juice and zest, mint, and oil; season with salt and pepper. Toss gently, taking care not to smash the grains of rice. Garnish with pea tendrils before serving, if using.

3 cups jasmine rice
3 tablespoons vegetable oil
1/3 cup finely chopped peeled fresh ginger
3 large garlic cloves, minced
4 1/2 cups low-salt chicken broth
3/4 teaspoon salt
1 large bunch fresh cilantro, 2 inches of bottom stems trimmed and discarded, tops and remaining stems coarsely chopped

Steps:

  • Place rice in large sieve; rinse under cold running water until water runs clear. Drain. Heat oil in heavy large saucepan over medium-high heat. Add ginger and garlic; stir until fragrant, about 30 seconds. Add rice and stir 3 minutes. Stir in broth and salt. Sprinkle cilantro over. Bring to boil. Reduce heat to medium-low; cover and cook until rice is tender, about 18 minutes. Remove from heat; let stand covered 10 minutes. Fluff rice with fork. Transfer to bowl and serve.

Tips:

  • Use high-quality jasmine rice. Fresh, fragrant jasmine rice will give your dish the best flavor.
  • Rinse the rice thoroughly before cooking. This will remove any dirt or debris from the rice and help it cook evenly.
  • Use a tight-fitting lid when cooking the rice. This will help the rice cook evenly and prevent it from drying out.

  • Fluff the rice with a fork before serving. This will help separate the grains of rice and make it light and airy.
  • Add your favorite vegetables, protein, and seasonings to make a complete meal. Some popular options include peas, green onions, carrots, chicken, shrimp, and tofu.
