1 pound hot or sweet Italian sausage
1 pound ground beef
½ onion, chopped
1 ½ pounds beef stew meat, cut into 1/2 inch pieces
1 (28 ounce) can diced tomatoes
1 (12 fluid ounce) bottle dark beer
2 cups water
¼ cup chili powder, or to taste
¼ teaspoon red pepper
¼ teaspoon white pepper
¼ cup white sugar
½ teaspoon ground cinnamon
salt and black pepper to taste
3 tablespoons tomato paste
1 (15 ounce) can kidney beans, rinsed and drained

Steps:

  • Cook and stir sausage in a large skillet over medium heat until browned. Drain; place sausage in a pot large enough to hold all ingredients. In same skillet, cook and stir onion with ground beef over medium heat until beef is browned and onions are tender; drain and add to the large pot.
  • In same skillet, cook and stir stew beef over medium heat until browned. Without draining, pour stew beef into the large pot.
  • Pour tomatoes, beer, and water into the pot with meats. Stir in chili powder, red pepper, white pepper, sugar, and cinnamon. Season to taste with salt and black pepper. Simmer until stew beef is very tender, at least 2 hours, stirring occasionally and adding more water as needed. If you prefer a thicker chili, thicken as needed with tomato paste. If using kidney beans, add them 10 minutes before serving, just in time to heat through.

Took me awhile to get this the way I wanted it by playing around with several different recipes. I am a bit of a wimp and this is at my threshold for spice, so adjust to your tastes if you like it hot.

2 lbs lean ground beef
1 lb sirloin, diced
1 medium onion, chopped
16 ounces tomato sauce
28 ounces kidney beans, undrained
12 ounces beer
15 ounces diced tomatoes with green chilies
2 garlic cloves, minced
1 tablespoon paprika
1/4 teaspoon cayenne
3 beef bouillon cubes
1/2 teaspoon oregano
1 teaspoon pepper
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon salt

Steps:

  • Brown ground beef in large pan or pot; remove and drain grease if necessary.
  • Add sirloin and onion and saute until lightly browned. Return ground beef to pot. Add remaining ingredients and mix well.
  • Heat over medium-high heat until boiling. Reduce heat and simmer 2-3 hours, covered, stirring occasionally.

This is my take on my dad's chili recipe. He calls his "Dad's Set Your Face on Fire Chili", but I tone mine down, since I don't like it quite as spicy. This is still very tasty with a bit of a kick though!

1 lb ground beef
1/2 lb ground pork
1 medium onion, chopped
1 (16 ounce) can mild chili beans
1 (16 ounce) can canned spicy chili with beans
1 (16 ounce) can diced tomatoes with green chilies
1 (16 ounce) bottle pace medium thick & chunky salsa
2 tablespoons ground cumin
3 tablespoons dark chili powder
1 dash oregano
1 dash garlic powder
1 (12 ounce) bottle beer (a very hoppy beer, such as an India Pale Ale is best)

Steps:

  • 1. Cook the ground beef and pork. Drain and discard the fat.
  • 2. Add precooked meat to a large pot with all the other ingredients.
  • 3. Cook on Low heat for at least an hour. A longer cook time is better. Stir frequently so it doesn't burn!
  • 4. Serve with cheese and tortilla chips or crackers.
  • Note: This can also be cooked in the crock pot. Less chance of burning it. It also freezes well!

2 pounds ground beef
2 stalks celery, chopped

1 (14 ounce) can tomato sauce
1 cup water

Steps:

1 red bell pepper, finely chopped
1 yellow bell pepper, finely chopped

1 orange bell pepper, finely chopped

2 pounds ground beef
8 serrano chile peppers, diced
3 (14.5 ounce) cans diced tomatoes
