GRILLED JERK PORK TENDERLOIN
I feel that the apple cider makes this jerk marinade unique, and a bit untraditional. Being from the apple country of Virginia, the apple cider was a natural. For added flavor, add apple or hickory wood chips soaked in water on top of the hot coals. You can begin grilling when the chips start smoking. Grilled pineapple goes well with this as a side dish.

Steps:
- Preheat oven to 450 degrees F, then put the pork tenderloin in a roasting pan.
- In a small bowl, combine 2 tablespoons of the brown sugar with the Dijon mustard, paprika & ginger, then spread HALF of this mixture over the pork tenderloin, before baking uncovered for 15 minutes.
- When the 15 minutes are up, spread the pork with the remaining brown sugar mixture & bake 15 to 20 minutes longer, or until a meat thermometer reads 145 degrees F, but if you're a traditionalist, you'll want the thermometer to read 160 degrees F!
- Meanwhile, for the salsa, in a small mixing bowl, combine the bell pepper & onion with the last tablespoon of brown sugar, along with the cup of diced pineapple & pineapple juice.
- When the pork comes out of the oven, let it stand briefly before slicing the meat & serving it with a generous portion of salsa.

JERK-SPICED MANGO PINEAPPLE CHUTNEY
I grew up eating mango, pineapple and spicy food, so enjoy the combination of these flavors. I try to make this chutney during the summer when the fruit is most flavorful and affordable. It's fine to adjust the spiciness according to your liking. You can serve this with any meat, but also with fish, such as salmon.-Sugiyarti Jorgenson, Kodiak, Alaska

Tips:
- To make the most of the jerk seasoning, prepare it a day ahead of time to allow the flavors to meld.
- Use a sharp knife to score the pork tenderloin before marinating it. This will help the marinade penetrate the meat more deeply.
- If you don't have a grill, you can cook the pork tenderloin in a grill pan over medium heat.
- To make the pineapple chutney, use a ripe pineapple. This will give the chutney a sweeter flavor.
- If you want a spicier chutney, add a chili pepper to the mixture.
Conclusion:
This jerk pork tenderloin with fresh pineapple chutney is a delicious and easy-to-make dish that is perfect for a summer cookout. The pork is tender and flavorful, and the chutney is a sweet and tangy complement. This dish is sure to be a hit with your family and friends.
