I have taken this to MANY family and pot luck gatherings and it always is a huge hit. If you have other favorite veggies, you may add, or omit something if your family doesn't like it. Broccoli, cauliflower and mushrooms are just the basics.

1 head fresh broccoli, cut into florets
1 head cauliflower, broken into small florets
4 ounces fresh mushrooms, sliced
1 green bell pepper, chopped
3 stalks celery, diced
1 onion, finely diced
½ cup distilled white vinegar
2 tablespoons poppy seeds
1 cup white sugar
2 teaspoons mustard powder
1 teaspoon salt
1 ½ cups vegetable oil

Steps:

  • Blanch broccoli and cauliflower in a large pot of boiling water until just barely tender. Drain and rise with cold water.
  • In a large bowl combine broccoli, cauliflower, mushrooms, pepper, celery and onion.
  • In a medium bowl, combine the vinegar, poppy seeds, sugar, mustard, salt and vegetable oil. Mix until well blended.
  • Pour the marinade over the vegetables and mix well. Chill overnight before serving. Keep any extras refrigerated.

This is a recipe that I requested often as a child and now I serve it to my family.It has such a fresh taste and soooo good.

1 lb ground beef, browned
1 can rinsed and drained kidney bean
1 onion, diced
2 tomatoes, diced
1/2 head shredded lettuce
1 1/2 cups sharp cheddar cheese
1 (16 ounce) bottle Catalina dressing
3 cups small Fritos corn chips
1 package taco seasoning

Steps:

  • Brown ground beef,drain off fat and add taco seasoning.
  • In a very large bowl add all the other ingredients except the meat and catalina,add the meat after it has cooled down some so it will not melt the cheese,about 5-10 minutes.Pour the Catalina over the entire salad,using about half of the bottle and adding more as desired,toss to coat the salad.Serve immediately.
  • This recipe will serve a crowd and is not recommended to refrigerate any leftovers as will become soggy.

1 medium onion, finely diced
salt and ground black pepper to taste
¼ cup water
1 ½ tablespoons taco seasoning mix
1 (15 ounce) can dark red kidney beans, drained
½ (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®), crushed
1 large head romaine lettuce, chopped
1 ½ medium tomatoes, diced
½ cup shredded Cheddar cheese, or more to taste
½ cup Catalina salad dressing, or to taste

Steps:

  • Heat a large nonstick skillet over medium to medium-high heat and saute ground beef, diced onion, salt, and pepper together until ground beef is browned and no longer pink and onions are tender, about 10 minutes. Add 1/4 cup water and taco seasoning to the meat. Stir to coat and allow to simmer for 1 minute to thicken. Set aside to cool while you prep the salad.

SALAD MIX
1 large salad greens
1 can(s) black olives, sliced and chilled (6.5 oz)

1 large English cucumber, sliced
1 bag(s) tortilla chips, corn, white, yellow, or blue
1 package(s) Mexican blend, shredded (8 oz)
DRESSING
