CARNE CON CHILIES
This delicious tomatillo-based sauce can be made with beef, pork or chicken though it is traditionally served with pork. Unfortunately, I don't have precise measurements of the seasonings, but do some tasting along the way! Serve it over rice for a delicious Mexican dish!

MARGO KNUDSON'S CHILI CON CARNE
I adopted this recipe in the February 2005 recipe adoption. I had no idea who Margo Knudson is, so I googled her. Turns out she won the 1987 International Chili Society Cookoff with this recipe! This is the first time I made "real" chili, with cubed beef instead of ground beef and no beans! The chili is spicy, but not overly so. It has more of a flavorful, complex kind of heat to it. I ended up using slightly more beef broth and tomato sauce than called for in the recipe.

Steps:
- Heat oven to 160C/140C fan/ gas 3. Heat a large cast-iron pot or saucepan over a high flame, pour in the oil, then drop in the onions, chillies, paprika and thyme. Cook for 5 mins until the onions soften. Add the celery, give it a stir and crumble in the stock cube. Stir again and cook for another 5 mins
- Add the beef, stir well, then colour for a few mins to coat the meat with the spices. Add the flour and coat everything with a more few stirs, then add the remaining ingredients, along with 1 tsp salt.
- Let it come to the boil, then put a lid on, place in the oven, reduce the temperature to 140C/120C fan/ gas 1 and cook for 4 1 /2 hrs.
- Take the pot out of the oven and remove the carrots, chop them into small chunks, then put them back in. I like plenty of sauce, but you may want to remove some if you don't want it too saucy - be sure to keep it, it's great on toast when cold. Remember to remove the chillies before you serve. Finally, scatter with coriander, if you like

C. V. WOODS WORLD CHAMPIONSHIP CHILI CON CARNE
Award winning chili recipe. I think I would kick it up a bit by adding chicken bouillon and a bouquet garni to the broth. Being a fan of cilantro, I would increase the amount considerably. Also, topping a serving with a small amount of cheese would be great.

Tips:
- Choose the right chili powder: Not all chili powders are created equal. For the best flavor, look for a chili powder that is made from a blend of different types of chili peppers, such as ancho, guajillo, and cayenne.
- Don't be afraid to experiment with different types of beans: Black beans, pinto beans, and kidney beans are all popular choices for chili, but there are many other types of beans that you can use. Try experimenting with different beans to find the ones that you like best.
- Add some vegetables to your chili: Vegetables add flavor, texture, and nutrients to chili. Some good choices include onions, bell peppers, tomatoes, and corn.
- Don't overcook your chili: Chili is a slow-cooked dish, but it's important not to overcook it. Overcooked chili can become tough and bland.
- Serve chili with your favorite toppings: Sour cream, cheese, onions, and avocado are all popular toppings for chili. Choose your favorite toppings and enjoy!
