2 lbs ground beef, cooked and drained
1 (1 1/4 ounce) packet taco seasoning
4 ounces sour cream
4 ounces mayonnaise or 4 ounces light sour cream
8 ounces cheddar cheese, shredded and divided
1 yellow onion, sliced
2 cups biscuit mix (I would find something else for this to many carbs!!!! )
2 tomatoes, sliced
1 green bell pepper, sliced
1 (4 ounce) can sliced jalapeno peppers

Steps:

  • Heat oven to 325. Brown ground beef and add taco seasoning and water, according to packet instructions; set aside.
  • In a separate bowl, combine sour cream, mayonnaise, 4 ounces of cheddar cheese, and half of the onions; set aside.
  • Stir biscuit mix and water (directions on box) to form soft dough. Pat dough on the bottom and one-half-inch up the sides of an 9 x 13 inches greased casserole dish.
  • Saute remaining onions and bell peppers until slightly tender.
  • On top of biscuit mix, evenly distribute ingredients in the following order: ground beef, tomato slices, green peppers, onions, jalapeno peppers, sour cream mixture and end with remaining shredded cheese.
  • Bake for 30-40 minutes or until edges of dough are lightly browned.

2 (4 ounce) cans green chilies, drained
1 lb monterey jack cheese, grated
1 lb cheddar cheese, grated
4 egg whites
4 egg yolks
2/3 cup evaporated milk
1 tablespoon unbleached all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper, freshly ground

Steps:

  • Preheat oven to 325 degrees.
  • Dice chiles and combine in a bowl with grated cheeses.
  • Put into a well-greased shallow dish (2-quart , 12x8x2 inch).
  • With an electric mixer on high speed, beat egg whites until peaks form.
  • Set aside egg whites.
  • In a bowl, combine egg yolks, milk, flour, salt and pepper.
  • Fold egg whites into egg mixture.
  • Pour over cheeses.
  • Use a fork to push egg mixture into cheese.
  • Bake for 1 hour.

2 pounds ground beef
1 (1 ounce) package taco seasoning mix
3/4 cup water
1/2 cup sour cream
1/2 cup light mayonnaise
1 cup shredded cheddar cheese (divided)
1 onion (diced and divided)
2 cups Bisquick biscuit mix
1 cup water
1 green bell pepper (diced)
2 Roma tomatoes (diced)
1 (4 ounce) can green chilies

Steps:

  • Preheat oven to 325 degrees. Spray a 9 x 13 inch baking dish with non-stick cooking spray.
  • Brown ground beef until no longer pink, drain grease. Then add taco seasoning and water and let simmer for 3-4 minutes.
  • In a medium bowl mix sour cream, mayo, half of the cheese, and half of the onion together and set aside.
  • In another bowl, mix together biscuit mix and water to make a soft dough. Press dough into the bottom and 1/2" up the sides of greased 9 x 13 inch pan.
  • Saute remaining onions and green peppers until barely tender.
  • On top of the biscuit, layer the remaining ingredients in this order: ground beef, diced tomatoes, green peppers and onions, green chilies, sour cream mixture, and remaining cheddar cheese.
  • Bake for 30-35 minutes or until edges are slightly browned.
