Time 1h30m

Yield 8 servings

Number Of Ingredients 8

Two 15-ounce cans sliced peaches in syrup
1/2 cup (1 stick) butter
1 cup self-rising flour
1 cup sugar
1 cup milk
Homemade Whipped Cream, recipe follows
2 cups whipping cream, chilled in the fridge
4 tablespoons sugar

Steps:

  • Preheat the oven to 350 degrees F.
  • Drain 1 can of peaches; reserve the syrup from the other. Place the butter in a 9- by 12-inch ovenproof baking dish. Heat the butter on the stove or in the oven until it's melted. In a medium bowl, mix the flour and sugar. Stir in the milk and the reserved syrup. Pour the batter over the melted butter in the baking dish. Arrange the peaches over the batter. Bake for 1 hour. The cobbler is done when the batter rises around the peaches and the crust is thick and golden brown. Serve warm with fresh whipped cream
  • Chill a large metal mixing bowl and the wire beater attachment in the freezer for about 20 minutes. Pour the chilled cream and sugar into the cold mixing bowl and beat until it forms soft peaks, about 5 minutes. The mixture should hold its shape when dropped from a spoon. Don't overbeat or you'll have sweetened butter!

JUST PLAIN GOOD & EASY PEACH COBBLER

I got this from a friend, her daughter's recipe. I've tweaked the recipe just a bit. It's no hassle to make and just plain good.

Categories     Pies

Number Of Ingredients 8

2 can(s) peach slices with syrup 15.25 oz or 1 large can
1 cup(s) sugar
1-2 teaspoon(s) cornstarch, optional to thicken
1/2-1 teaspoon(s) vanilla extract
1 package(s) pillisbury refrigerated roll out pie crust
1/4 cup(s) sugar and cinnamon mixed
3/4 stick(s) butter, salted
1/8 teaspoon(s) nutmeg, optional

Steps:

  • Butter 9x13 glass dish.
  • In bowl, combine peaches, vanilla and 1 cup sugar and if desired, cornstarch. Stirring together and mixing well. Pour into baking dish.
  • Roll out Pillsbury pie crust on floured surface (I use parchment.) Cut into strips with pizza cutter. Then lattice over top of peach mixture. Note: May leave crust whole if preferred.
  • Mix 2 tsp of cinnamon, 1/8 tsp nutmeg and 1/4 cup sugar together. Sprinkle evenly over pie crust strips.
  • Cut 3/4 stick butter into tbsps. and place over top. Bake at 400F until golden brown-about 30 minutes.

Tips:

  • Use ripe peaches: For the best flavor, use ripe peaches that are slightly soft to the touch. If your peaches are not ripe, you can ripen them by placing them in a paper bag at room temperature for a few days.
  • Peel the peaches: To make peeling the peaches easier, place them in a bowl of boiling water for 30 seconds to 1 minute. Then, remove the peaches from the water and immediately transfer them to a bowl of ice water. This will loosen the skin and make it easy to peel off.
  • Use a variety of spices: Don't be afraid to experiment with different spices to flavor your cobbler. Some good options include cinnamon, nutmeg, ginger, and allspice.
  • Don't overmix the batter: Overmixing the batter will make the cobbler tough. Mix the batter just until the ingredients are combined.
  • Bake the cobbler until the crust is golden brown and the filling is bubbly: This usually takes about 45 minutes to 1 hour.

Conclusion:

Peach cobbler is a classic summer dessert that is easy to make and always a crowd-pleaser. With its sweet and juicy peaches, buttery crust, and warm spices, it's the perfect way to end a meal or enjoy a special occasion. So next time you have a craving for something sweet, give this peach cobbler recipe a try. You won't be disappointed!
