1 lb Ground beef (browned and drained)
1 package Taco seasoning
1 16 oz can Refried beans
8 6- inch Tortillas (flour or corn- whatever you prefer)
1 10 oz can Red enchilada sauce
1 10.5 oz can Cream of mushroom soup
1/2 cup Milk
2 cups Shredded Mexican Style Cheese
Toppings: sour cream, black olives, etc. (optional)

Steps:

  • In a medium skillet brown ground beef until no longer pink; drain.
  • Add the taco seasoning, 1/3 cup of water and refried beans; stir until combined.
  • In a medium bowl add the enchilada sauce, cream of mushroom soup and milk; mix until blended.
  • Spray your slow cooker with non-stick cooking spray.
  • Layer half the meat mixture, half the tortillas, half the sauce and half the cheese.
  • Repeat layers and top with remaining cheese.
  • Cook on high for 2 hours or on low for 4 hours or until bubbly and warm throughout.

1 1/2 lbs ground beef
1 medium onion, chopped
1 -2 garlic clove, minced
1/2 teaspoon salt
1/2 teaspoon pepper
6 corn tortillas
2 cups fresh corn (or 2 cups frozen corn or 15-oz can)
1 (19 ounce) can enchilada sauce
2 cups shredded cheddar cheese
1 (2 1/2 ounce) can sliced ripe olives, drained
1 cup sour cream

Steps:

  • Brown ground beef and drain. Add onion and garlic; cook over medium heat until tender and transparent. Add salt and pepper. Place 2 tortillas in bottom of crockpot. Place a third of the following in layers over the tortillas: meat, corn, sauce, cheese and olives. Repeat tortillas and other layers two times. Cover and cook on low 6-8 hours Serve with sour cream.

1 small onion, cut into pieces
1 minced garlic clove
1/2 teaspoon ground red pepper
1/2 teaspoon salt

Steps:

  • To prepare sauce, blend tomatoes and their liquid with onion and garlic in a blender or food processor. Pour into a medium sized sauce pan. Add the red pepper, salt and tomato paste. Heat to a boil, then simmer for 5-10 minutes.

1 (15 oz) can diced tomatoes
1 (4.5 oz) can Old El Paso™ chopped green chiles
1 cup corn frozen kernels
Juice of 1 small lime
1 teaspoon ground cumin
1 tablespoon chili powder
1/3 cup chopped cilantro
Salt and black pepper, to taste
1 1/2 cups shredded Mexican cheese
Optional toppings: Sliced green onions, avocado, diced tomatoes, sour cream, cilantro, and lime wedges

Steps:

  • Combine the quinoa, water, onion, garlic, red pepper, black beans, enchilada sauce, diced tomatoes, green chiles, corn, lime juice, cumin, chile powder, and cilantro in a slow cooker. 10 (6 inch) corn tortillas, quartered
1 (1 ounce) package taco seasoning mix
1 ¼ cups water
1 (12 ounce) jar chunky salsa
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can condensed cream of chicken soup
4 cups shredded Mexican cheese blend

Steps:

  • Crumble the ground beef into a skillet over medium-high heat. Cook and stir until evenly browned. Add taco seasoning and water; simmer for 15 minutes over low heat.
  • In a medium bowl, stir together the salsa, cream of mushroom soup and cream of chicken soup. Mix in most of the cheese, reserving 3/4 cup for later.

½ yellow squash (diced)
1 onion (diced)
15 ounces pinto beans (rinsed and drained)
15 ounces black beans (rinsed and drained)
1 cup salsa
10 ounces red enchilada sauce (divided)
1 ounce low sodium taco seasoning (packet)
2 cups shredded Colby Jack Cheese
6 corn tortillas (6 inch)
2 cups shredded lettuce (optional topping)
Tablespoons sour cream (optional topping)
1 tomato (diced-optional topping)
1 avocado (diced-optional topping)

Steps:

  • In a large skillet over medium-high heat, cook ground beef, green pepper, squash, and onion until ground beef is no longer pink.
  • Reduce heat to low and add beans, salsa, 1/2 can of the enchilada sauce, and taco seasoning and cook until heated through. Let simmer for 5 minutes so that the flavors can meld together.
