KAHLUA CRYSTALLIZED NUT BRITTLE

Kahlua Crystallized Nut Brittle image

Mixed nut, coffee flavored brittle. I got a Kahlua Recipe Booklet with a purchase of Kahlua over 15 years ago. I give this as a gift to friends at Christmas. This is not a recipe to make around small children (candy is boiling hot) and you must follow the directions exactly. Be prepared to spend time stirring the candy to hard crack stage. (20-30 minutes non-stop)

Categories     Candy

Time 50m

Yield 4 cups

Number Of Ingredients 5

3 cups whole mixed nuts (cashews, almonds, walnuts, pecans and macadamias)
3/4 cup granulated sugar
1/2 cup Kahlua
1 tablespoon corn syrup
2 teaspoons butter

Steps:

  • Heat oven 275 degrees, place nuts in shallow pan and heat 20 minutes, mixing after 10. (If using macadamia nuts and walnuts add them only for the last 10 minutes they are oily and can burn).
  • In a large saucepan (you will be mixing the nuts in this at the end) combine sugar, Kahlua, corn syrup and butter using a wooden spoon stirring constantly and scraping sides to get all sugar crystals melted. Sugar mixture will need to boil at least 15 minutes before you need to insert candy thermometer, keep stirring until (300 degrees F- hard-crack stage) It is very important to get all the way to 300 or the candy will be gritty and soft.
  • Take off heat, pour in nuts, stirring quickly then pour mixture out onto large cookie sheet lightly sprayed with 'pam'. Scraping all candy out and gently spreading out candy with wooden spoon. Let cool until you can handle and break into smaller chunks. Store in airtight tin.

CANDIED NUTS

This is one of my favorites not only to have on hand at home, but to pull together for a last minute hostess gift.

Provided by Rob Tanner

Categories     Appetizers and Snacks     Nuts and Seeds

Time 55m

Yield 8

Number Of Ingredients 6

2 cups raw peanuts
1 cup white sugar
⅓ cup water
1 pinch coarse sea salt, or to taste
1 pinch ground cinnamon
1 pinch chili powder

Steps:

  • Grease a baking sheet or line with a silicone mat.
  • Cook and stir peanuts, sugar, and water together in a wide, heavy skillet over medium heat until liquid evaporates and nuts begin to crust with the hardening sugar; about 5 minutes.
  • Reduce heat to low and continue to cook and stir, scraping the bottom of the pan to coat peanuts with syrup as the sugar begins to melt and darken to a deep caramel color, about 10 minutes. Tilt pan away from the heat as needed to allow peanut mixture to darken without burning. Remove from heat immediately when peanuts are deeply bronzed; stir.
  • Sprinkle peanuts with sea salt and cinnamon or chili powder; tilt peanuts onto prepared baking sheet to cool completely. Break up clumps. Store in an airtight container at room temperature for up to 1 week.

This recipe I love to make around Thanksgiving to drink or give as presents at Christmastime. The longer you wait the better it is, try and wait 4 weeks. I got this recipe from one of my own concoctions from trying several different recipes.

Tips:

  • Use fresh nuts: Fresh nuts will yield the best results. If using store-bought nuts, be sure to check the expiration date.
  • Toast the nuts before crystallizing them: Toasting the nuts will enhance their flavor and make them more crunchy.
  • Use a heavy-bottomed saucepan: A heavy-bottomed saucepan will help prevent the sugar syrup from burning.
  • Use a candy thermometer: A candy thermometer will help you ensure that the sugar syrup reaches the correct temperature.
  • Be patient: It takes time for the sugar syrup to crystallize on the nuts. Don't rush the process or the nuts will not turn out properly.

Conclusion:

Kahlua crystallized nuts are a delicious and easy-to-make treat that is perfect for any occasion. They can be enjoyed on their own, used as a topping for desserts, or given as gifts. With a little patience, you can create beautiful and delicious crystallized nuts that will impress your friends and family.
