3 sprigs fresh thyme
One 4-inch sprig fresh rosemary
Two 15-ounce cans white beans, such as cannellini

Kalamata Relish

Steps:

  • Heat the oil in a large skillet over medium heat. Add the onion, garlic, thyme, and rosemary. Cook until onions are translucent, 5 to 6 minutes. Add beans with their liquid, 1 cup of water, salt, pepper, and cayenne, and bring to a simmer. Cook until liquid is nearly evaporated, about 8 to 10 minutes. Remove thyme and rosemary sprigs; discard. Carefully transfer mixture to the bowl of a food processor, add the tahini and lemon, and puree until smooth. Adjust seasoning, if necessary. Transfer to a serving bowl, let cool.
  • Top with Kalamata relish and drizzle with olive oil before serving. Serve with pita triangles.

Tips:

  • Choose ripe, flavorful tomatoes: The quality of your tomatoes will greatly impact the taste of your relish. Look for tomatoes that are deep red and have a sweet, juicy flavor. If you can, use homegrown tomatoes or tomatoes from a local farmer's market.
  • Use a variety of colors of peppers: Red, orange, and yellow peppers will add a beautiful pop of color to your relish. They will also add a variety of flavors, from sweet to spicy.
  • Don't be afraid to experiment with different herbs and spices: Oregano, basil, thyme, and rosemary are all great additions to kalamata relish. You can also add a bit of heat with some cayenne pepper or red pepper flakes.
  • Process the relish to your desired consistency: If you like a chunky relish, simply pulse the ingredients in a food processor until they are chopped to your desired size. If you prefer a smoother relish, you can puree the ingredients until they are completely smooth.
  • Let the relish rest before serving: This will allow the flavors to meld and develop. You can store the relish in the refrigerator for up to two weeks.

Conclusion:

Kalamata relish is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is perfect for grilled meats, fish, and vegetables. It can also be used as a sandwich spread or as a dip for crackers or chips. If you are looking for a new and exciting way to add flavor to your meals, give kalamata relish a try. You won't be disappointed!
