1 pound fresh chorizo
4 Yukon Gold potatoes, cubed
1 medium onion, finely chopped
4 cloves garlic, minced
8 cups chicken broth
1 pound kale, stems removed, leaves torn into 1-inch pieces
1/2 cup grated Parmesan
Kosher salt and black pepper

Steps:

  • Heat the olive oil in a large stockpot over medium heat. Brown the chorizo in the oil, 5 to 7 minutes. Add the potatoes, onions, garlic and chicken broth.
  • Simmer until the potatoes are fork tender, 20 to 25 minutes. Reduce the heat to low, add the kale, and cover. Cook until the kale wilts, 7 to 10 minutes.

1 pound kale, leaves torn from stems and finely chopped (10 cups leaves)

  • Heat the oil in a large stockpot over medium heat. Stir in the onions and garlic, and saute until onions are golden and tender, about 10 minutes.

You can reduce prep time by using pre-chopped or frozen kale, frozen onion and mushrooms and jarred garlic.....For each can of low sodium broth, I substitute 2 cups water, 1 tablespoon VegiZest (from drfuhrman.com) and 1/8 teaspoon salt (optional).

12 ounces kale, de-stemmed and chopped
8 large garlic cloves, minced
1 large onion, chopped
6 mushrooms, chopped
5 (15 ounce) cans low sodium vegetable broth, divided
2 (15 ounce) cans low-sodium small white beans, drained and rinsed, divided
1 (15 ounce) can diced tomatoes
2 tablespoons dried parsley flakes
1 tablespoon italian seasoning
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon paprika
1/4 teaspoon fresh ground black pepper
1 teaspoon fennel seed

Steps:

  • Remove the center stem from the kale and discard. Wash and chop kale leaves and set aside. If you don't know how to remove the stems from kale, Google: remove kale stems.
  • Prepare garlic, onion and mushrooms and set aside.
  • In a blender or food processor, puree 1 can of broth and 1 can of beans until smooth.
  • Combine puree, kale, garlic, onion, mushrooms, remaining broth, beans, tomatoes and seasonings in a large soup pot (at least 6 quarts).
  • Bring to a boil on moderately high heat, stirring frequently to prevent sticking or burning on the bottom.
  • Reduce heat and simmer 30-45 minutes, stirring occasionally.

1/2 cup wheat berries
2 tablespoons olive oil
3 1/2 ounces shiitake mushrooms, stemmed and thinly sliced (1 cup)
10 garlic cloves, peeled and thinly sliced
1/4 cup white wine (may sub brown rice vinegar)
4 cups vegetable broth
1 cup water
10 ounces kale

  • Soak wheat berries in large bowl of cold water overnight.
  • Heat oil in 2 qt saucepan over medium heat. Add mushrooms, and season with salt, if desired. Saute mushrooms 10 minutes or until beginning to brown.

  • Sir in white wine and simmer until vinegar is almost evaporated, stirring to scrape up browned bits from pan.
