CURRY DIP FOR CRUDITES
This curry dip is fantastic with crudites and/or chips. My latest idea is mixing it with my albacore tuna instead of mayo. Mouth-wateringly good. Tastes even better the next day.

KALEIDOSCOPE CHILI
This is a mild one-pot chili featuring Knorr® Spanish Rice. It brings all the comfort of your standard bowl of chili, but with a wonderful mildly seasoned and sweet taste that is sure to be a hit with family and friends, both young and old! Garnish with your favorite toppings; I chose shredded cheese, cilantro, onion, black olives, and a dab of sour cream. This would be great served with corn bread and a side salad.

Yield Serves 20
Number Of Ingredients 18
Steps:
- 1. Mix all the aïoli ingredients in a large bowl and season to taste. The aïoli will keep for 2 weeks in the refrigerator.
- 2. Rub a little lemon on the mushrooms to prevent them from turning brown.
- 3. You can make the platter up to a day ahead and store the vegetables in separate Ziploc bags. It's best to blanch the vegetables the morning of the party. (You can blanch the asparagus in boiling water with a teaspoon of baking soda, secured with a rubber band, for 30 seconds. Place the spears in an ice bath and drain-don't leave them in the ice bath or they'll get soggy.) Repeat with the zucchini, blanching it whole, cutting it on an angle to the desired thickness.
- 4. Arrange the veggies on a platter with a bowl of aïoli and scatter the herbs on top if you like.
Tips:
- Choose fresh, colorful vegetables. This will make your crudite platter more visually appealing and nutritious.
- Cut the vegetables into uniform sizes and shapes. This will help them cook evenly and look more elegant on the platter.
- Use a variety of vegetables. This will add flavor and texture to your crudite platter. Some good options include carrots, celery, broccoli, cauliflower, radishes, and cherry tomatoes.
- Prepare the vegetables ahead of time. This will save you time when you're ready to serve the platter. You can cut the vegetables and store them in an airtight container in the refrigerator for up to 24 hours.
- Serve the crudite platter with a variety of dips. This will allow your guests to choose their favorites. Some good options include hummus, guacamole, ranch dressing, and tzatziki sauce.
Conclusion:
A crudite platter is a healthy and delicious appetizer or snack that is perfect for any occasion. It is easy to make and can be customized to your liking. With a little planning, you can create a crudite platter that is both beautiful and delicious.
