KATHY'S HERBED CORN

Kathy's Herbed Corn image

This is a fantastic recipe.I served this to 30 guests for the first time in 1994, at a BBQ, on 4th of July. The raves were soooo good, everyone wanted the recipe. We had family visiting from Minnesota, and they thought they had ate corn every possible way that was good, till they tried this. This is very simple. We love it soo much, I brave the winter to go out to the gas grill. Another great recipe from Taste of Home.

HERBED CREAM OF CORN SOUP

Yield Makes about 4 cups, serving 4

Number Of Ingredients 6

4 cups cooked fresh corn kernels or two 10-ounce packages frozen, thawed
1 cup chicken broth
2 tablespoons finely chopped white part of scallion
1/2 teaspoon dried thyme
1 cup half-and-half
2 tablespoons minced fresh parsley leaves

Steps:

  • In a blender blend the corn, the broth, the scallion, and the thyme until the mixture is smooth. Strain the mixture through a sieve set over a bowl, pressing hard on the solids, discard the solids, and stir in the half-and-half and the parsley. Season the soup with salt and pepper and chill it, covered, for 1 hour, or until it is cold.

Tips:

  • Use Fresh Corn: Use fresh corn on the cob for the best flavor and texture. If you don't have fresh corn, you can use frozen corn kernels, but be sure to thaw them completely before using.
  • Cook the Corn Properly: Cook the corn until it is tender but still has a slight crunch to it. Overcooked corn will be mushy and bland.
  • Use Good Quality Herbs: Use fresh or dried herbs for the best flavor. If using dried herbs, use about half the amount of fresh herbs.
  • Don't Overcrowd the Pan: When cooking the corn, don't overcrowd the pan. This will prevent the corn from cooking evenly.
  • Season to Taste: Season the corn with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.

Conclusion:

Herbed Corn on the Cob is a delicious and easy-to-make side dish that is perfect for summer cookouts or potlucks. With just a few simple ingredients, you can create a dish that is both flavorful and healthy. So next time you're looking for a quick and easy side dish, give Herbed Corn on the Cob a try!
