Yield 8 servings

Number Of Ingredients 17

2 1/2 pounds round roast, cut into 1-inch cubes
Kosher salt and freshly ground black pepper
1/4 cup all-purpose flour
1 tablespoon olive oil
8 ounces slab bacon, diced
4 large carrots, cut on the diagonal into 1-inch pieces
2 medium yellow onions, sliced
1 stalk celery, cut into 1-inch pieces
2 cloves garlic, thinly sliced
2 bay leaves
2 tablespoons tomato paste
1 pound frozen pearl onions
1 teaspoon fresh thyme
One 750-milliliter bottle dry red wine
2 tablespoons unsalted butter, at room temperature
10 ounces white mushrooms, quartered
Mashed potatoes, for serving

Steps:

  • Season the beef with salt and pepper. Sprinkle with 2 tablespoons of the flour and toss to evenly coat.
  • Heat the olive oil in a large Dutch oven over medium heat. Add the bacon and cook, stirring occasionally, until browned, 6 to 8 minutes. Remove with a slotted spoon and set aside. Drain all but 1 tablespoon of the bacon fat from the pot. Add the beef and brown in small batches, 2 to 3 minutes per side. Remove the beef from the pot and set aside.
  • Add the carrots, onions and celery and season with 2 teaspoons each salt and pepper. Cook, stirring occasionally, until the onions are translucent, about 10 minutes. Stir in the garlic and cook an additional 1 minute. Add the bay leaves. Stir in the tomato paste and cook for 2 minutes. Add the pearl onions, thyme and reserved bacon and beef. Add the wine plus 1 to 2 cups of water (enough to cover the beef) and bring to a simmer. Simmer, covered, until the beef is very tender, about 1 1/2 hours.
  • Add the mushrooms to the stew. In a small bowl, use a fork to combine the softened butter with the remaining 2 tablespoons flour. Push the flour mixture through a strainer into the stew. Bring to a boil, then reduce to a low simmer. Cook until the broth is slightly thickened, about 20 minutes.
  • Ladle into individual bowls over mashed potatoes and serve.

Categories     main-dish

Time 2h50m

Yield 4 to 6 servings

Number Of Ingredients 13

2 pounds lean stewing beef (such as top round), cut into 2-inch cubes
Kosher salt and freshly ground black pepper
5 tablespoons all-purpose flour
3 tablespoons olive oil
One 12-ounce bottle stout beer, such as Guinness
10 small new potatoes, cut in half
2 medium yellow onions, quartered
4 large carrots, cut on the diagonal into 1-inch pieces
1 celery stalk, cut into 1-inch pieces, plus 1/2 cup leaves, roughly chopped
4 cups low-sodium beef broth
3 tablespoons unsalted butter, softened
1 cup frozen peas
3 scallions, sliced, optional

Steps:

  • Season the beef generously with salt and pepper. Sprinkle 2 tablespoons of the flour evenly over the meat.
  • Heat the olive oil in a large heavy saucepan or Dutch oven over medium-high heat. Add the beef in a single layer without crowding the pan (work in 2 batches if necessary) and cook, turning, until browned on all sides. Remove the beef from the pan and reserve.
  • Add the beer to the pan and use a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Bring the liquid to a boil and cook until it is reduced by half; return the beef to the pot and add the potatoes, onions, carrots, celery stalk, broth and 1 cup water. Bring to a boil, reduce the heat to a very low simmer, cover and cook until the beef is very tender, 1 1/2 to 2 hours.
  • In a small bowl, mash the butter with the remaining 3 tablespoons flour until smooth. While whisking the liquid, drop small pieces of the butter paste into the stew, whisking until each piece dissolves. Continue adding the butter paste until it is used up and completely dissolved into the stew. Add the peas and continue cooking until the stew is thickened and the peas are cooked, about 5 minutes. Taste and season with salt and pepper (about 1 1/2 teaspoons salt and 3/4 teaspoon pepper).
  • Ladle the stew into individual bowls and garnish with the chopped celery leaves and sliced scallions, if using.

Time 35m

Yield 4 servings

Number Of Ingredients 13

1 tablespoon unsalted butter
8 ounces cremini mushrooms, sliced
Kosher salt and freshly ground black pepper
1 1/2 pounds boneless, skinless chicken breasts, cut into chunks
1 tablespoon olive oil
1 yellow onion, thinly sliced
3 tablespoons all-purpose flour
3 cups chicken broth
1 tablespoon Worcestershire sauce
1 packet French onion soup mix
1/3 cup sour cream, plus more for serving
Cooked wide egg noodles, for serving
3 tablespoons minced fresh chives

Steps:

  • In a large skillet, melt the butter over medium heat. Add the mushrooms and cook, stirring occasionally, until golden brown, 5 to 7 minutes. Season with salt and pepper. Remove from the skillet and set aside.
  • Season the chicken with salt and pepper. Return the skillet to the stove, add the olive oil and increase the heat to medium high. Add the chicken, working in batches if necessary, and cook until it begins to brown on each side, about 5 minutes. Add the onions and cook until tender, 3 to 4 minutes. Stir in the flour and cook for an additional 2 minutes. Stir in the broth, scraping up any browned bits with a wooden spoon. Stir in the Worcestershire sauce, soup mix and cooked mushrooms. Reduce the heat to low and simmer until the broth is thickened to a gravy, about 7 minutes. Stir in the sour cream.
  • Serve over egg noodles with a dollop of sour cream and garnish with fresh chives.

Tips:

  • When choosing beef for stroganoff, look for a cut that is tender and flavorful, such as flank steak, sirloin, or tenderloin.
  • Be sure to slice the beef against the grain to ensure tender results.
  • To create a rich and flavorful sauce, use a combination of beef broth, sour cream, and Dijon mustard.
  • For a creamy and indulgent stroganoff, use heavy cream instead of sour cream.
  • If you prefer a lighter sauce, use a combination of milk and sour cream.
  • To add a touch of sweetness to the sauce, use a small amount of brown sugar or honey.
  • For a more savory stroganoff, add a splash of Worcestershire sauce or soy sauce.
  • Serve stroganoff over egg noodles, mashed potatoes, or rice.
  • Garnish with fresh parsley, chives, or dill.
