1 lb mixed frozen seafood (we use a mix of shrimp,scallops,and crab)
2 (15 1/2 ounce) cans of loaded baked cream of potato soup
1 cup milk
1 teaspoon dill
1 teaspoon black pepper
bacon, to crumble into if desired
1/4 cup butter
3 sticks celery, chopped less if desired

Steps:

  • In a roaster cooker place seafood and butter along with the celery let cook at 350 degrees for about 20 mins stirring occasionaly.
  • add the soup, milk, and seasonings lower temp to about 150 cook till hot serve with bread. enjoy!

2 tablespoons butter or 2 tablespoons margarine
2 medium onions, finely chopped
1 medium carrot, thinly sliced
2 celery ribs, thinly sliced
1 red bell pepper, diced
1/4 cup chopped fresh parsley
3 cloves garlic, minced
3/4 cup dry sherry
2 1/2 cups chicken broth
2 cups diced potatoes
3 1/2 cups canned tomatoes, drained and chopped,liquid reserved
1 bay leaf
2 teaspoons sweet paprika
2 teaspoons chili powder
1/4 teaspoon celery seed
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dried thyme
1/4 teaspoon cayenne pepper (optional)
1 1/2 lbs shrimp, peeled and deveined
12 ounces bay scallops
6 ounces lump crabmeat or 6 ounces imitation crabmeat, cut into chunks
1/4 cup chopped fresh parsley

Steps:

  • Heat butter in saucepan; add carrot, celery, bell pepper, parsley, and garlic, saute until onions are tender, about 5 minutes.
  • Add sherry to the pan and cook off most off the alcohol, deglazing the bottom of the pan as you go.
  • Pour in broth and add potatoes, and bring to a boil; then reduce heat, cover and simmer for about 12-14 minutes, stirring occasionally, until potatoes start to get tender.
  • Add tomatoes, bay leaf, paprika, chili powder, celery seed, pepper, thyme and cayenne; cover and simmer another 20 minutes or until mixture begins to thicken.
  • Stir in shrimp, scallops and crab, and cook until shrimp curl and turn bright pink and scallops turn opaque, and chowder is heated through, about 3 minutes.
  • Stir in 1/4 cup parsley.
  • Serve with crusty loaves of Italian or French bread and herb butter, if you desire.

Great for a cold winter day. One of my favorite chowders. This is my adaptation of a recipe from "Better Homes New Cook Book"

6 slices bacon, center cut
1/2 tablespoon olive oil
1 cup celery, finely sliced
1 cup onion, chopped
2 cups chicken broth, reduced fat
2 cups potatoes, peeled and cubed
1 cup carrot, finely sliced
1 (16 ounce) can tomatoes, diced
1/8 teaspoon black pepper (or to taste)
1 tablespoon cornstarch
1 tablespoon water
13 ounces clams, canned, undrained
3 ounces cod, haddock, pollock (or fish of your choice)
3 ounces imitation crabmeat
3 ounces shrimp, cooked and peeled
1 clam juice, bottled

Steps:

  • Cut crab and fish fillet into bite-sized pieces.
  • Spray a large soup pot with nonstick cooking spray add the oil.
  • Add bacon, celery and onion; cook until bacon is browned and onions are tender; over med-low heat.
  • Add chicken broth, juice from the clams, bottled clam juice, potatoes, carrots, tomatoes and pepper.
  • Cover; and simmer about 35 minutes or until potatoes are cooked.
  • Add clams, shrimp, crab and fish fillet.
  • Heat until fish is cooked about 3 minutes, add cornstarch to water and blend well, stir into chowder; cook and stir to thicken.
  • You may need to add additional cornstarch and water to get the desired thickness.
  • Serve.
  • Use your favorite combination of fish, mussels ect. Try to keep the total weight of seafood to 1 lb.

This is one of my favorite recipes to serve on a cold, rainy day in Ireland. It is the most requested recipe that I have. It is flexible and you can use various seafood ingredients depending on availability and preference. Very nice with Irish brown bread.

2 tablespoons butter
½ cup chopped onion
½ cup chopped celery
4 ½ cups milk
1 (10.75 ounce) can condensed cream of celery soup
1 ½ cups diced potatoes
1 tablespoon dried dill weed
½ teaspoon red pepper flakes
¼ teaspoon ground black pepper
¼ teaspoon caraway seeds
3 dashes hot pepper sauce (such as Tabasco®)
salt to taste
1 (8 ounce) salmon fillet, cut into cubes
8 ounces baby shrimp

Steps:

  • Melt butter in a skillet over medium-high heat. Saute onion and celery until tender, 3 to 5 minutes. Add milk, canned soup, potatoes, dill, red pepper flakes, black pepper, caraway seeds, hot pepper sauce, and salt. Bring to a boil. Simmer until potatoes are slightly tender, about 15 minutes. Add salmon and shrimp. Cook until opaque, about 3 minutes.

4 slices bacon
2 tablespoons butter
1 medium onion, chopped
2 cups potatoes, diced
1/2 cup celery
1/2 cup carrot, sliced
3 cups boiling water
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon Old Bay Seasoning
1 dash Tabasco sauce, to taste
1 cup milk or 1 cup half-and-half
2 tilapia fillets, cut into bite sized pieces
1 1/2 cups sea scallops

Steps:

  • Fry bacon until crisp, set aside and reserve drippings.
  • Cook onion and celery in drippings until translucent.
  • Add butter, potatoes, carrots, 2 cups boiling water, salt, pepper and Old Bay.
  • Cover and simmer 10-15 minutes until vegetables are tender.
  • Add fish and scallops; add more water if needed,.
  • Cook 10 more minutes.
  • Add milk and Tabasco.
  • Reheat, but do not boil.
  • Garnish with bacon crumbles.
