Time 1h45m

Yield 12 Servings

Number Of Ingredients 12

1¼ cups all-purpose flour, plus more for rolling
¼ teaspoon salt
½ teaspoon sugar
1 stick chilled unsalted butter, cut in pieces
3 tablespoons ice water
2 large eggs
1 cup sugar
1 stick unsalted butter, melted and cooled
¼ cup Maker's Mark® Bourbon
½ cup all-purpose flour
1½ cups walnuts, toasted and coarsely chopped
1 cup semi-sweet chocolate chips

On a lightly floured work surface, roll the dough into a 12-inch round. Fit into a 9-inch pie dish. Tuck in the overhang and decoratively crimp the edges. Freeze while heating the oven. 3. Preheat the oven to 350°F. Prick the bottom of the dough all over with a fork. Line with parchment paper and fill with pie weights or dried beans. Bake until the is golden and dry, about 20 minutes. Remove the parchment and pie weights. Return the crust to the oven and continue baking until golden brown, about 5 minutes. Let cool slightly on a wire rack. 4. Meanwhile, make the filling: In a large bowl, whisk the eggs and sugar. Continue whisking while adding the butter, then the bourbon. Stir in the flour until well combined. Stir in the walnuts and chocolate chips. Pour into the warm pie shell. 5. Bake until the filling is set and the top golden, about 30 minutes. Cool in the pan on a wire rack. BASIC KENTUCKY CHOCOLATE WALNUT PIE

Basic Kentucky Chocolate Walnut Pie image

Now, this is the 1st recorded, BASIC Kentucky Derby Day Pie from Southern Indiana. Just across the river from Louisville, KY, where the Kentucky Derby made this pie famous! (We can't call it by it's original name here because of trademark/copyright issues, but this is the original Derby Day pie recipe.) I must be honest with you, that ever since this "famous 1st recipe" was used, there have been several other (MODIFIED) versions of this wonderful dessert...Most of them include some sort of Kentucky Bourbon!!! In my opinion, the ones that include that KY Bourbon are the best, but I wanted to share with you the ORIGINAL pie (from the 1920's)...Just FYI...

COPYCAT KENTUCKY PIE

Copycat Kentucky Pie image

This is the closest recipe I can find to replicating the Kentucky Pie at McAlister's Deli. This stuff is absolutely to die for! It's great if you serve it like they do at McAlister's...warm, drizzled with chocolate syrup, topped with whipped cream, and served with vanilla ice cream.

Provided by loriyeargan

Categories     Pie

Time 45m

Yield 1 pie

Number Of Ingredients 9

3/4 cup sugar
2 eggs, slightly beaten
3 tablespoons rum or 3 tablespoons rum extract
1/2 cup flaked coconut
1/2 cup flour
1/2 cup butter or 1/2 cup margarine
1/2 cup chocolate chips
1/2 cup chopped pecans
9 inches unbaked pie shells

Steps:

  • Combine sugar, flour, and eggs; mix well.
  • Stir in nuts, coconut, and rum.
  • Melt the butter/margarine, then stir into mixture.
  • Pour chocolate chips on bottom of the unbaked pie shell.
  • Pour mixture over chips.
  • Bake at 350°F for about 35 minutes.

Tips:

  • To make the perfect pie crust, use a food processor to combine the flour, sugar, and salt. Then, add the butter and pulse until the mixture resembles coarse crumbs. Finally, add the water and pulse until the dough just comes together. Avoid overworking the dough, as this will make it tough.
  • For a flaky pie crust, chill the dough for at least 30 minutes before rolling it out. This will help to prevent the gluten from developing, which can make the crust tough.
  • When rolling out the dough, use a light touch and avoid overworking it. Roll the dough out to a 12-inch circle, then transfer it to a 9-inch pie plate. Trim the edges of the dough, leaving a ½-inch overhang.
  • To prevent the pie crust from shrinking, pre-bake it for 10-12 minutes at 350 degrees Fahrenheit. Then, fill the pie crust with the desired filling and bake according to the recipe instructions.
  • For a golden brown pie crust, brush the top with milk or cream before baking.

Conclusion:

Kentucky Pegasus Pie is a delicious and unique dessert that is perfect for any occasion. The combination of chocolate, nuts, and coconut is irresistible, and the flaky pie crust adds the perfect finishing touch. With a little planning and effort, you can easily make this pie at home. So next time you're looking for a special dessert, give Kentucky Pegasus Pie a try. You won't be disappointed!
