This is a family favorite Dutch recipe. Mom made this when we were growing up. The common curry powder found in the grocery is fine for this recipe. If you are looking for the authentic taste, or are a spice connoiseur, you would look for Indonesian curry powder or Sate seasoning. I find it on-line.

CURRY BEEF STEW SERVED OVER STEAMED RICE

Curry Beef Stew Served over Steamed Rice image

I was feeling nostalgic the other day and was remembering a curry dish that my Japanese mother would occasionally make. My mother passed away in 2002, and I never got the recipe from her. The other day I started experimenting, and I finally came up with a dish that is close to the one she would make. This dish is similar to a thick beef stew, but has a wonderful curry flavor. My mother's dish had a greener curry. I think she used to get her curry at the oriental store. I used a curry that I had gotten at my local supermarket. I do want to try this again with a curry from the oriental store. You can use more or less curry to suit your taste. This is cooked slowly to make the meat nice and tender.

Tips:

  • Choose the right type of rice: Use a long-grain rice, such as basmati or jasmine rice, for this dish. These types of rice will cook up light and fluffy, and they will not stick together.
  • Soak the rice before cooking: Soaking the rice for 30 minutes before cooking will help it to cook more evenly and will also help to remove some of the starch. This will result in a more fluffy and flavorful rice.
  • Use a flavorful broth: The broth that you use to cook the rice will add a lot of flavor to the dish. Use a broth that is flavorful and that you enjoy the taste of. Chicken broth, vegetable broth, or beef broth are all good options.
  • Add vegetables and spices to the rice: Vegetables and spices can add a lot of flavor and color to this dish. Try adding some chopped onion, garlic, carrots, celery, or peas. You can also add some spices, such as curry powder, cumin, or coriander.
  • Cook the rice until it is tender: The rice should be cooked until it is tender, but not mushy. This will take about 18-20 minutes.
