Steps:
- Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment or silicone baking mats and spray with cooking spray.
- Microwave the cauliflower in a microwave-safe bowl on high, stopping and stirring halfway through, until tender, about 2 minutes; let cool for 5 minutes.
- Put the cauliflower in a clean towel and squeeze out any liquid. Transfer to a medium bowl and add the Parmesan, Italian seasoning, garlic powder and a pinch of salt. Stir to combine.
- Scoop heaping-tablespoon mounds of the mixture onto the prepared baking sheets, spacing them about 2 inches apart (10 to 12 to a sheet). Shape and flatten the mounds into small discs, about 2 1/2-inches wide.
- Bake until the edges of the crisps are deep golden brown, about 14 minutes. Let cool on the pan for 5 minutes before serving; the crisps will firm up as they cool.
PARMESAN HERB SEASONING
This makes wonderful little gifts. I make a huge batch up and put in sandwich bags and freeze. 1 Bag makes one of the recipes below. It is also nice sprinkled on veggies, homemade potato chips or at 1 package to a container of sour cream for a great dip.

HANGTOWN FRY WITH PARMESAN AND FRESH HERBS
My variation on the traditional Hangtown Fry contains cheese and fresh herbs and is finished under the broiler where the egg/oyster mixture puffs up like a cross between a frittata and a souffle. I get the best results using a cast iron skillet. It's important that the oven be hot before you place the skillet under the broiler.

Steps:
- Preheat the broiler; place the rack about 5 inches from the broiling unit.
- Whisk eggs in a bowl. Add cream, hot sauce, basil, oregano, black pepper, and 1 tablespoon of the grated Parmesan cheese.
- Heat oil in a skillet over medium-high heat. Melt the butter in the skillet and swirl it around to coat the pan evenly. Place the oysters in the skillet and brown on both sides, about 1 minute on each side. Let the liquid reduce a bit, about 30 seconds longer.
- Slowly pour the egg mixture over the oysters, keeping the oysters evenly distributed in the pan. After about 30 seconds, shake the pan slightly but do not stir. After about 3 minutes when the bottom and sides of the eggs begin to set, sprinkle the remaining cheese on top and place the pan under the broiler.
- Broil until the eggs begin to puff around the edges and the top is nicely browned, 5 to 7 minutes. Remove from the oven; sprinkle with chopped parsley. Serve immediately from the skillet in wedge-shaped pieces.

HERBED PARMESAN CRISPS

Yield Makes 12 servings

Steps:
- Preheat oven to 350°F.
- In a small bowl, mix all the ingredients together. On a baking sheet coated lightly with cooking spray or lined with parchment paper, place tablespoonfuls of the mixture with a couple inches between each, and spread them out into ovals about four inches long and two wide. (You should have about 12 crisps.) Bake in the oven until they turn golden brown, 6 to 8 minutes. If not shaping them around a spoon handle, cool crisps flat on a metal rack.
Tips:
- Use a mandoline slicer to get evenly sliced potatoes. This will help the chips cook evenly.
- Soak the potato slices in cold water for at least 30 minutes before frying. This will help remove the starch and prevent the chips from sticking together.
- Dry the potato slices thoroughly before frying. This will help them crisp up.
- Use a high-quality oil for frying, such as canola or peanut oil. These oils have a high smoke point and won't burn easily.
- Fry the potato slices in small batches so that they don't overcrowd the pan. This will help them cook evenly.
- Season the chips immediately after they come out of the fryer. This will help the seasoning stick to the chips.
Conclusion:
These Parmesan and Herb Kettle Chips are a delicious and easy snack that can be enjoyed by people of all ages. They are perfect for parties, potlucks, or simply as a quick and easy snack. With just a few simple ingredients, you can make these chips in the comfort of your own home. So next time you're looking for a tasty snack, give these Parmesan and Herb Kettle Chips a try.
