1 cup white sugar
¼ cup all-purpose flour
3 tablespoons cornstarch
¼ teaspoon salt
2 cups water
3 eggs
1 tablespoon butter
¼ cup key lime juice
1 tablespoon grated lime zest
1 (9 inch) pie crust, baked
¼ teaspoon cream of tartar
6 tablespoons white sugar

  • Combine the 1 cup white sugar, flour, cornstarch and salt in a saucepan. Gradually stir in the water. Cook over medium heat until thickened.
  • Gradually stir the cooked sugar mixture into the beaten egg yolks, beating constantly. Return the mixture to low heat and cook, stirring constantly, for 2 minutes. Stir in the butter, lime juice and lime zest. Let mixture cool slightly.
  • Beat egg whites until light and frothy. Add the cream of tartar and continue beating until stiff peaks form. Gradually beat in the remaining 6 tablespoons white sugar and beat until the meringue is stiff and glossy.

KEY LIME MERINGUE PIE MADE WITH NO CONDENSED MILK

Key Lime Meringue Pie Made With No Condensed Milk image

I have this thing about canned condensed milk. Every time I look at the number of calories in the can, I just balk at using it. But I do love Key Lime Pie in spite of the fact that most recipes use the condensed milk. So I was delighted to find a recipe for this favorite without the condensed milk. It may end up having the same number of calories, but I will just feel better knowing I avoided the high-calorie milk. I have not yet tried this recipe; I am saving it for a special occasion. Note that preparation time includes cooling time.

TRADITIONAL KEY LIME PIE

Traditional Key Lime Pie image

I have tried those pie recipes using cream cheese or cool whip, but they are not authentic key lime pies. If you want the "real deal", this is it.

Tips:

  • For the best flavor, use fresh key limes. If you can't find key limes, you can substitute regular limes, but the flavor will be slightly different.
  • Make sure the butter is very cold before you add it to the flour. This will help to create a flaky crust.
  • Don't overmix the dough. Overmixing will make the crust tough.
  • Chill the dough for at least 30 minutes before you roll it out. This will help to prevent the dough from shrinking in the oven.
  • When you're filling the pie shell, don't overfill it. The filling will expand as it bakes.
  • Bake the pie until the filling is set and the crust is golden brown.
  • Let the pie cool completely before you serve it. This will help the filling to firm up.

Conclusion:

This key lime pie is the perfect dessert for any occasion. It's easy to make and always a crowd-pleaser. The combination of the tart key limes, the creamy filling, and the flaky crust is simply irresistible. So next time you're looking for a delicious and refreshing dessert, give this key lime pie a try. You won't be disappointed.
