9 graham crackers (1 sleeve), finely crushed
6 tbsp. butter, melted
1/4 c. granulated sugar
Pinch kosher salt

4 (8-oz.) blocks cream cheese, softened
1 c. granulated sugar
4 large eggs
1/4 c. sour cream
1/2 tsp. pure vanilla extract
2 tbsp. key lime juice
2 tbsp. all-purpose flour
1 tbsp. key lime zest, plus more for garnish
Pinch kosher salt

Steps:

  • Preheat oven to 325° and grease an 8" springform pan with cooking spray.
  • Make crust: In a large bowl, mix together graham cracker crumbs, melted butter, sugar, and salt until totally combined. (Mixture should resemble wet sand.) Press into bottom and up sides of prepared pan.

2 packages (8 ounces each) reduced-fat cream cheese, cubed
1 package (8 ounces) fat-free cream cheese, cubed
Sugar substitute equivalent to 2/3 cup sugar
1/3 cup sugar

3 large eggs, lightly beaten
1 cup reduced-fat sour cream
1/3 cup key lime or lime juice
2 teaspoons vanilla extract
2 teaspoons grated lime zest

1 ½ cups graham cracker crumbs
6 tablespoons butter, melted
24 ounces cream cheese, softened
1 cup white sugar
1 tablespoon cornstarch
3 eggs
1 tablespoon grated lime zest
⅔ cup key lime juice

Steps:

  • Combine cookie or graham cracker crumbs with butter or margarine. Press into bottom and partially up sides of 9 inch springform pan. Refrigerate.
  • In a large bowl, beat with an electric mixer the cream cheese, sugar, lime peel, and cornstarch until smooth and fluffy. Beat in eggs one at a time, blending just until smooth. Add key lime juice with mixer on low. Finish mixing by hand. Do not over beat, or cake will crack during baking. Pour batter into prepared crust.
  • Bake at 300 degrees F (150 degrees C) for 55 to 65 minutes, or until set. To minimize cracking, place a shallow pan half full of hot water on lower rack during baking.
  • Turn oven off, and let cheesecake stand in oven 30 minutes with the door open at least 4 inches. Remove from oven. Refrigerate cake overnight, and up to three days.

2 cups sour cream or 2 cups low-fat sour cream

Steps:

  • Preheat the oven to 325ºF. Place the cream cheese and sugar in a large bowl and beat well.
  • Beat in the eggs, one at a time. Add the lime juice and spoon the mixture into a greased 9-inch glass pie plate.

1 3/4 cups finely gound graham cracker crumbs
1/2 cup sugar, divided
7 tablespoons butter, melted
1 (3 ounce) package cream cheese, at room temperature
3/4 cup mascarpone cheese, at room temperature
1 egg
1/2 cup key lime juice

Steps:

  • Preheat oven to 350°F In a small bowl, combine graham cracker crumbs and 1/4 cup sugar. Stir in butter. Combine until all crumbs are coated. Pat the mixture into the bottom and sides of a 9" springform pan. Bake for 8 minutes.
  • In large bowl, with an electric mixer, beat cream cheese, mascarpone and remaining sugar. Beat in egg. Add lime juice. Pour cheese mixture into pan. Bake at 350F for 10 minutes.
