GREAT-GRANDMA'S CANDIED YAMS

Great-Grandma's Candied Yams image

This is my great-grandma's candied yams recipe. I started making them a few years ago, now everyone asks for them every year. The secret I think is in the orange juice and slow cooking.

Time 4h15m

Yield 16

Number Of Ingredients 8

8 medium yams, peeled and cubed
½ cup white sugar
½ cup brown sugar
1 tablespoon ground cinnamon
½ teaspoon ground nutmeg
6 tablespoons unsalted butter, cut into small chunks
1 cup orange juice, or as needed
1 cup miniature marshmallows, or to taste

Steps:

  • Bring a large pot of water to a boil over high heat. Add yams and boil for 10 minutes. Drain and rinse twice with cold water. Soak in cold water for 15 minutes.
  • While yams are soaking, preheat the oven to 275 degrees F (135 degrees C).
  • Mix white sugar, brown sugar, cinnamon, and nutmeg together in a small bowl.
  • Peel and cut yams into chunks and place in a large baking dish. Dot with butter and sprinkle with sugar mixture so all yams are coated. Carefully pour enough orange juice into the bottom of baking dish to measure 1/2 inch.
  • Bake in the preheated oven, basting often, until yams are tender and the liquid is thick and sticky, 3 to 3 1/2 hours. Sprinkle with mini marshmallows. Turn on the oven's broiler. Broil until marshmallows are melted and toasty, about 5 minutes.

MOM'S CANDIED YAMS

Mom's Candied Yams image

My mom never wrote this recipe down and I call my favorite every year for the recipe! Of course she never wrote it down either!!! This is one of those recipes that takes me back when I taste it. I'm going to do my best to write what my "Aunt Poddy" tells me every year, using the amounts as best as I can, but I will still call her every year just to have her walk me through it!!!! My brother got to taste them this year and he said it was just like mom's, so maybe I'm getting it right!!!

MOM'S CANDIED YAMS WITH CARAMEL

Mom's Candied Yams with Caramel image

I took my mom's childhood candied yam recipe and added a layer of caramel. It is now a must at every Thanksgiving and Christmas and is often requested with much anticipation by anyone who has had it. One recipe will serve 6, but barely. I promise there won't be leftovers. If you're going to feed 6 or more, I suggest doubling the recipe in a 9x13-inch pan.

Tips:

  • Choose the Right Yams: Select firm, plump yams with smooth, unblemished skin. Avoid yams with bruises or cuts.
  • Prepare Yams Properly: Peel and cut the yams into uniform-sized pieces to ensure even cooking.
  • Use Fresh Ingredients: Fresh ingredients like butter, brown sugar, and spices will enhance the flavor of the candied yams.
  • Simmer Slowly: Simmer the yams in the butter-sugar mixture over low heat to allow the flavors to meld and the yams to become tender.
  • Add Aromatics: Enhance the flavor of the candied yams by adding aromatic spices like cinnamon, nutmeg, and ginger.
  • Don't Overcook: Overcooking can make the yams mushy. Cook until they are tender but still hold their shape.
  • Serve Warm: Candied yams are best served warm, straight out of the pot. You can also reheat them gently if needed.
