This is a recipe I came up with by combining two of my favorite recipes into one awesome recipe. You can make this salsa as hot as you want by adding more peppers.

Time 6h5m

Yield 64

Number Of Ingredients 15

1 red onion, chopped
1 white onion, chopped
1 yellow onion, chopped
6 pounds fresh tomatoes, peeled and chopped
2 banana peppers, chopped
3 green bell peppers, chopped
3 (6 ounce) cans tomato paste
½ cup white vinegar
2 tablespoons garlic powder
1 ½ tablespoons salt
1 tablespoon cayenne pepper
1 ½ teaspoons ground cumin
¼ cup brown sugar
¼ cup white sugar
8 pint canning jars with lids and rings

Steps:

  • Combine red onion, white onion, yellow onion, tomatoes, banana peppers, green peppers, tomato paste, white vinegar, garlic powder, salt, cayenne pepper, cumin, brown sugar, and white sugar in a large pot. Simmer until thick, about 3 hours.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the salsa into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process for 10 to 15 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Refrigerate after opening.

Kickin' Hot Grilled Veggies & Black Beans Salsa image

This recipe strays a bit from the traditional varieties of salsa by starting with grilled veggies and adding unexpected kick from two kinds of paprika (hot Hungarian and smoked Spanish.)

KATE'S KICKIN' SPICE BLEND

Kate's Kickin' Spice Blend image

I put this together because I found myself using these same seasonings a lot in everyday cooking and I finally got tired of adding things separately! I use (with a tablespoon of olive oil) to season water before I steam greens or corn, to roast potatoes or yams (cut into 1/2 inch cubes and toss with olive oil), as a dry rub on meat for bbq, and in soups to add a little extra kick. It tastes similar to the seasoning they use in some restaurants for French fries. I use it pretty liberally because I like extra spice, can be used more sparingly if you like less. Start with a tablespoon and make it yours!

Tips:

  • Use ripe tomatoes: The riper the tomatoes, the sweeter and more flavorful your salsa will be.
  • Choose the right tomatoes: There are many different varieties of tomatoes, but not all of them are good for salsa. Some of the best varieties include Roma tomatoes, plum tomatoes, and cherry tomatoes.
  • Roast your tomatoes: Roasting tomatoes intensifies their flavor and gives them a smoky, caramelized taste.
  • Use fresh herbs: Fresh herbs like cilantro, basil, and oregano add a bright, flavorful touch to salsa.
  • Don't over-process your salsa: A good salsa should have some texture. If you over-process it, it will become too smooth and lose its flavor.
  • Taste your salsa as you go: Salsa is a personal preference, so taste it as you go and adjust the ingredients to your liking.
  • Let your salsa rest: After you make your salsa, let it rest for at least 30 minutes before serving. This will allow the flavors to meld together.

Conclusion:

Salsa is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own personal taste. Whether you like it mild, medium, or hot, there is a salsa recipe out there for you. So next time you are looking for a way to add some excitement to your meal, try making a batch of homemade salsa. You won't be disappointed!
