1 tablespoon olive oil
1 yellow onion, chopped
1 garlic clove, minced
2 carrots, chopped
2 teaspoons sodium-free chili powder
1 teaspoon ground cumin
4 cups low-sodium low-fat chicken broth
2 (15 ounce) cans low-sodium kidney beans, rinsed and drained
1 cup frozen whole kernel corn
1/4 teaspoon fresh ground black pepper
1 (14 1/2 ounce) can low-sodium stewed tomatoes
salt, to taste

Steps:

  • Heat a large pot over medium heat, and warm olive oil.
  • Add chopped yellow onion, minced garlic, and chopped carrots; then cook, stirring as necessary, until tender (about 5 minutes).
  • Add chili powder and ground cumin; and cook, stirring constantly, for 60 seconds.

3 pork chops
3 carrots, sliced
3 celery, chopped
1 cup canned whole tomatoes, chopped
1 onion, chopped
2 (19 ounce) cans kidney beans
2 potatoes, cubed
2 cubes beef bouillon cube

Steps:

  • Place meat, carrots, celery, and tomatoes in a large pot over medium heat. Fill with water to completely cover meat, almost to the top of the pot. Bring to a boil, then reduce heat and simmer 90 minutes.

The original is from Southern Living 1983 cookbook and is credited to Mrs. Frank Patton from Johnson City, Tenn. This is a favorite of ours that we often double and freeze in lunch size portions for DH. The original recipe calls for canned beans, but we process dried beans. If you don't have a pressure cooker, it will take longer, so if you're in a hurry, use the canned variety. We also tend to increase the spices and herbs and use hot sausage to increase the impact. (time does not include soaking)

1 1/2 cups dried kidney beans (or 2 cans, 16 oz. each kidney beans, un-drained)
2 cups beef stock (or water, enough to cover beans by 2 inches)
1 lb bulk pork sausage
1 large onion, chopped
2 garlic cloves, minced
1 (28 ounce) can diced tomatoes, un-drained
1 bay leaf
1 quart beef stock (or water)
1 teaspoon salt (to taste)
1 1/2 teaspoons seasoning salt
3/4 teaspoon dried thyme
1/2 teaspoon salt
1 red bell pepper, chopped
1 cup potato, in 1/2-inch dice

Steps:

  • Pick over dried beans and soak for at least 4 hours. If not using a pressure cooker, soak beans overnight.
  • Place beans in pressure cooker with enough beef stock or water to cover by 2 inches and process 12-15 minutes, depending on how long they've been soaked. (Feel free to add extra garlic or a bay leaf if you so desire.) Allow to come down from pressure naturally. If not using a pressure cooker, place in pot and simmer for 2-3 hours until almost tender, adding more liquid if necessary.
  • In a large Dutch oven brown sausage, stirring to crumble the meat. Drain pan drippings if desired. Add onion and garlic and saute until transparent. Add tomatoes, bay leaf, stock or water, salt, seasoned salt, thyme and beans with their liquid whether canned or processed dry. Cover and simmer for 1 hour, stirring occasionally. Add bell pepper and diced potato; cover and simmer 20 more minutes until potatoes are tender. Remove bay leaf before serving.

If time permits, use the less expensive and healthier method of presoaking dried legumes overnight, rinsing them then cooking them in unsalted water or broth and set aside until needed. You can do this a day or two ahead.. To have presoaked beans cook in your soup, add salt only towards the end when the beans are tender. Salting too early will result in tough beans."

2 cups savoy cabbage, finely shredded

3 tablespoons olive oil
1 garlic clove, finely chopped
1/4 cup small shell pasta
1/4 cup short-grain rice or 1/4 cup arborio rice
1 1/2 teaspoons coarse salt (to taste)
1/4 lb fresh green beans, trimmed ends and cut into 1/2-inch pieces
1 carrot, peeled and cut into 1/2-inch cubes
1/4 teaspoon black pepper (to taste)

Steps:

  • In a 4-quart pot, combine the water with the cabbage, beans, and olive oil. Cover and bring to a boil over medium-high heat.
  • Reduce the heat to medium-low and with an occasional stir, simmer the soup for 40 minutes until the beans are easily mashed with a fork.
  • Using the back of a long-handled fork or spoon, mash some of the beans against the inside of the pot. (You can also remove about ½ cup to a dish and mash them then scoop them back into the pot.).
  • Return the soup to a boil and add the pasta, rice and salt. Reduce the heat and continue to simmer, covered for 15 minutes then toss in the carrots, green beans and pepper.
  • Simmer 10 more minutes until the vegetables are tender to your taste.
  • Serve with some crusty bread.

2 garlic cloves, diced

3 ounces ham, diced
1/2 cup canned tomato

1 cup red kidney beans, drained
1/2 cup macaroni
salt
pepper
parmesan cheese, grated

Steps:

  • Heat olive oil in medium saucepan. Cook carrot and onion in hot oil, 5-7 minutes.

1 pound dried kidney beans or 3 14-ounce cans
2 onions, chopped

1 jalapeno, diced (optional)
1 14 ounce can chopped tomatoes
1 Tablespoon tomato paste

1/4 Teaspoon cayenne powder
1 Tablespoon paprika
1/2 Teaspoon dried oregano
4 Cups liquid (water, or stock)
Salt and pepper
2 avocados
1 small red onion, diced
1 green chili, seeded and chopped
1 Tablespoon cilantro, chopped
Juice from 1 lime

Steps:

  • 1) Go over dry beans and sort out any debris. Soak dried beans overnight in 3 cups of cold water per cup of beans. 2) Drain beans and add them to a pot with water that covers the beans by a few inches. Bring to a simmer for an hour and skim of any foam that forms. 3) Let your beans cool a bit and strain them. Feel free to save some of the bean water for the soup. 4) To make soup, add oil to a large heavy pan and once it's hot, add onions over medium heat. Cook for about 15 minutes until they are soft. Then add pepper and garlic and cook for another minute. 5) Next stir in all the spices followed by the beans, tomatoes, and tomato paste. 6) Add liquid to the pot and bring to a simmer. Simmer for 30 minutes, covered. 7) Use a blender (Emersion works best) to puree the soup to a almost smooth consistency. 8) Serve soup with guacamole topping.

1 c carrots, thinly sliced
2 Tbsp olive oil
1 qt vegetable broth
1 qt savoy cabbage, finely shredded
3 c kidney beans, cooked
2 Tbsp extra virgin olive oil
1 clove garlic, or 1 tsp garlic granules
1 1/2 tsp coarse sea salt
1/4 tsp black pepper
1 tsp turmeric
1/4 c quinoa, uncooked, rinsed

Steps:

  • 1. Heat a 4-quart pot over medium-high, add 2 Tblsp olive oil and the thinnly sliced carrots. Sautee a few minutes until the carrots begin to cook.
  • 2. Add the broth, turn heat to high, cover, and bring to a simmer. Add the finely shredded cabbage; again bring to a simmer. Add the cooked kidney beans, extra virgin olive oil, garlic and seasonings. Cover and bring to a boil.
  • 3. Add the rinsed uncooked quinoa, bring to a simmer, reduce heat to maintain a simmer and cook, uncovered, for 15 minutes or until the quinoa is cooked (it will become transparent and tender, and little coils will spring out).
  • 4. Serve with salad, and crusty bread for normies. Enjoy!
  • 5. I made this recipe just this way but with only 2 cups of cooked kidney beans, but we thought it would probably be better with half again more beans. With 3 cups of beans it will probably need mores seasoning too - maybe half again more seasoning? I'll update when I make it again and sort that bit out. Also, it served 3 adults - will have to double to feed the family.
  • 6. *Always be certain to cook dry red kidney beans properly - they must be BOILED for at least 10 minutes! (first soak them for 12 hours or overnight, toss soak water; make sure there is no salt in the cooking water until the beans are fully cooked and tender).

2 Tbsp pastina (small soup pasta)

Steps:

  • 1. Put soaked kidney beans in a large saucepan with 6 cups of water, bring to a boil, reduce heat, and simmer for an hour or so, until they are done. If you are using canned kidney beans, you can skip the step of simmering the beans for an hour.
  • 2. Add the leek, carrots, stock, and salt and cook for about 10 minutes. Add the potatoes and pastina. Bring quickly to a boil, then reduce heat and cook for 15 more minutes.
  • 3. Serve hot with injera bread or with pita bread.
  • 4. Serve hot to 4 as a first course or, with traditional injera bread torn into it, as a light meal.
