GARLIC SHRIMP & WHITE BEANS image

Number Of Ingredients 8

1 T olive oil
2 T chicken stock
1 1/2 c. chopped raw shrimp
3 cloves garlic, minced
1 can white beans, drained, rinsed
3 saffron threads
1 T parsley, chopped
kosher salt to taste

Steps:

  • Heat olive oil; add garlic and shrimp. Add stock and beans--cook 5-10 minutes until shrimp is pink. Add saffron. Add parsley and salt. Simmer for 5 minutes. Remove from heat.
