12 ounces uncooked elbow macaroni
2 pounds kielbasa or Polish sausage, halved lengthwise and sliced
1 tablespoon olive oil
2 medium onions, chopped
2 medium zucchini, quartered and sliced
2 medium carrots, grated
1/2 teaspoon minced garlic
1 jar (26 ounces) spaghetti sauce
1 can (14-1/2 ounces) stewed tomatoes
1 large egg, lightly beaten
1 carton (15 ounces) ricotta cheese
2 cups shredded cheddar cheese
2 cups shredded part-skim mozzarella cheese
2 green onions, chopped

Steps:

  • Cook macaroni according to package directions. Meanwhile, in a large skillet, brown sausage in oil over medium heat; drain. Add the onions, zucchini, carrots and garlic; cook and stir until crisp-tender, 5-6 minutes. , Stir in spaghetti sauce and tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. 1 tablespoon olive oil
½ cup chopped onion
1 teaspoon minced garlic
1 pound kielbasa sausage, sliced
1 (14.5 ounce) can Italian-style diced tomatoes
1 (4 ounce) can sliced mushrooms
1 teaspoon white sugar
1 teaspoon balsamic vinegar
kosher salt and ground black pepper to taste
1 pinch crushed red pepper, or to taste
1 (16 ounce) package penne pasta
1 cup frozen peas
3 leaves fresh basil, julienned, or more to taste
1 cup shredded Cheddar-Monterey Jack cheese blend

Steps:

  • Bring a large pot of lightly salted water to a boil for pasta.

2 tablespoons olive oil
1 large onion, sliced
1/4 cup all-purpose flour
1 quart milk
3 cups extra-sharp cheddar cheese
1 teaspoon hot pepper sauce
1 teaspoon salt
1 (14 ounce) package kielbasa, fully cooked, cut into 1/4 inch slices
3 fuji apples, cored, cut into 1/2 inch slices
2 scallions, thinly sliced

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Coat a 10-cup baking dish with non-stick cooking spray.
  • In large pot of lightly salted boiling water, cook rigatoni until al dente, firm but tender, following package instructions. Drain.
  • In large heavy-bottom saucepan, heat olive oil over medium-high heat.
