CREAMY PRAWN LINGUINE

Creamy prawn linguine image

Elegant, delicious and on the table in just 15 minutes - this prawn pasta hits the spot and feels a bit posh, too. By finely chopping most of the prawns, they'll stick beautifully to the linguine, in turn creating sweetness and texture.

Time 15m

Yield 2

Number Of Ingredients 9

150 g dried linguine
2 cloves of garlic
160 g raw peeled king prawns, from sustainable sources
4 rashers of higher-welfare smoked pancetta
olive oil
50 ml Italian red wine
1 heaped tablespoon mascarpone cheese
50 g rocket
10 g Parmesan cheese

Steps:

  • Cook the pasta in a pan of boiling salted water according to the packet instructions. Meanwhile, peel and finely slice the garlic. Run your knife down the back of 2 prawns, so they'll butterfly as they cook, then finely chop the rest.
  • Put a large non-stick frying pan on a medium heat. Finely slice the pancetta, sprinkle into the pan with 1 tablespoon of olive oil and fry until lightly golden. Toss in the garlic and whole prawns for 2 minutes, then go in with the wine and let it cook away. Toss through the chopped prawns and mascarpone for 1 minute, then use tongs to drag the pasta straight into the pan, letting a little starchy cooking water go with it. Roughly chop the rocket, add most of it to the pan and toss it all together over the heat until you have a silky sauce. Subtly season to perfection with the Parmesan and black pepper. Serve sprinkled with the remaining rocket and an extra grating of Parmesan, if you like.

Time 35m

Number Of Ingredients 10

1 lb spaghetti noodles
2 tablespoons olive oil, (divided)
1 cup chopped onion
5 cloves garlic, (minced)
2 (15-oz each) cans tomato sauce
1 teaspoon Italian seasoning
1 cup heavy whipping cream
1 cup freshly grated Parmesan cheese
1 lb shrimp, (peeled and deveined, tails removed)
fresh parsley (for garnish)

Steps:

  • Bring a large pot of water to a boil. Salt generously, then add the spaghetti. Cook until al dente. Before draining, reserve a mug full (at least a cup) of the pasta water.
  • In a large skillet, heat 1 tablespoon of the olive oil over medium heat. Add the onion and cook until softened, about 5 minutes. Add the garlic and cook another 30 seconds, until fragrant. Add the tomato sauce and the Italian seasoning. Bring to a bubble, then reduce the heat to a simmer. Let the sauce cook and reduce for about 10 minutes.
  • Increase the heat slightly, and stir in the cream. Once the sauce is back to a simmer, add the cheese and stir until melted. Taste the sauce and season with salt and pepper, if needed.
  • In another skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the shrimp and cook just until pink, 4-5 minutes.
  • Add the cooked pasta to the sauce, along with the shrimp. Stir to combine, adding the starchy pasta water as needed to loosen the sauce. Serve, topped with parsley if desired.

140g dried pasta , preferably wholemeal
85g frozen pea

Tips:

- **Mise en place**: Before you start cooking, make sure you have all your ingredients and equipment ready to go. This will help you stay organized and avoid scrambling around later. - **Choose fresh, high-quality ingredients**: The better the ingredients you use, the better your dish will taste. Look for ripe tomatoes, plump prawns, and fresh herbs. - **Don't overcrowd the pan**: When searing the prawns, make sure you don't overcrowd the pan. This will prevent them from cooking evenly and becoming soggy. - **Cook the prawns until they are just cooked through**: Overcooked prawns are tough and rubbery. Cook them until they are just opaque in the center, about 2-3 minutes per side. - **Make sure the sauce is well-seasoned**: Taste the sauce before serving and adjust the seasonings to your liking. You may want to add more salt, pepper, or herbs. - **Serve the dish immediately**: This dish is best served immediately after it is made. The pasta will start to absorb the sauce and lose its flavor if it sits for too long.

Conclusion:

King prawn tomato mascarpone is a delicious and easy-to-make dish that is perfect for a special occasion. The prawns are cooked to perfection in a rich and creamy tomato sauce, and the mascarpone cheese adds a touch of luxury. This dish is sure to impress your guests.
