2 boneless skinless chicken breasts (1/2 lb)
4 thin slices Canadian bacon
2 kaiser rolls, cut horizontally into thirds
3 tablespoons reduced-fat mayonnaise
4 leaves lettuce
2 slices tomato

Steps:

  • Heat gas or charcoal grill. To flatten each chicken breast, place between 2 sheets of plastic wrap or waxed paper. Working from center, gently pound chicken with flat side of meat mallet or rolling pin until about 1/4 inch thick; remove wrap.
  • When grill is heated, carefully oil grill rack. Place chicken on gas grill over medium heat or on charcoal grill over medium coals; cover grill. Cook 6 to 8 minutes, turning once, until chicken is no longer pink in center. During last 5 minutes of cooking time, heat bacon on grill, turning once, until hot. If desired, during last 3 minutes of cooking time, toast kaiser roll pieces, cut side down, on grill.
  • Spread cut sides of roll pieces with mayonnaise. Cut each chicken breast into 2 pieces. For each sandwich, on bottom section of roll, place 2 chicken pieces, overlapping if necessary. Top with lettuce leaf, tomato slice and middle section of roll. Place 2 Canadian bacon slices on top of middle roll section. Top with lettuce leaf and top section of roll. Press each sandwich slightly; spear each with 2 long toothpicks. Cut sandwiches in half between toothpicks.

3 slices toasted bread
2 tablespoons mayonnaise
2 slices American cheese
4 slices shaved ham
4 tomatoes, sliced, divided
4 leaves lettuce, divided
4 slices crisp bacon, divided
2 slices monterey jack cheese
4 slices shaved deli turkey

Steps:

  • Spread mayonnaise on one side of a piece of toast; add layer of American cheese, ham, two slices of tomato, two leaves of lettuce, and two pieces of bacon.
  • Spread mayonnaise on second piece of toast and place on top, mayo side down.

1/2 cup mayonnaise
1 tablespoon prepared horseradish sauce
2 tablespoons chili sauce or 2 tablespoons seafood cocktail sauce
16 ounces loaf king's Hawaiian sweet bread
2 -4 leaves green leaf lettuce
8 slices bacon, hot and cooked
12 ounces deli turkey or 12 ounces deli chicken, sliced thin
2 medium tomatoes, sliced

Steps:

  • Preheat oven to 325*.
  • Combine first three ingredients until well blended; set aside.
  • Wrap bread in foil and warm in oven for about 10 minutes. Slice loaf into 3 even, horizontal layers.
  • Spread 1/2 of mayonnaise sauce evenly over bottom layer, cover with lettuce leaves allowing edges to slightly extend beyond bread.

20 slices thinly cut pancetta
1/4 cuppine nuts
1 cup arugula (baby arugula or regular)
1 cup fresh basil leaves
1 cup grated Parmesan
1 cup oil-packed sun-dried tomatoes, chopped
1 tablespoon fresh squeezed lemon juice
1 clove garlic
1/2 cup extra-virgin olive oil
Kosher salt and freshly ground black pepper
12 slices fresh challah bread, cut about 1/3-inch thick
Japanese mayonnaise
1 pound maple-glazed turkey breast, sliced thin
4 crisp leaves red leaf lettuce

Steps:

  • Preheat the oven to 375 degrees F. Lay out the pancetta onto an ungreased baking sheet. Place in the oven and cook the pancetta until extra crispy, 18 to 20 minutes. Remove and let cool.
  • For the tomato-arugula pesto: In a dry skillet over medium heat, lightly toast the pine nuts until slightly golden, 3 to 5 minutes. Remove and set aside to cool.
  • In a food processor, add the toasted pine nuts, arugula, basil, cheese, sun-dried tomatoes, lemon juice and garlic. Pulse until just combined. Slowly stream in the olive oil until the pesto has a nice rustic consistency, about 10 seconds. Season with salt and pepper.
  • For the sandwich build: On the bottom of a slice of challah, schmear a bit of mayo and then top with some of the turkey slices and a piece of lettuce. Schmear pesto on both sides of the second slice of challah and place it on top of the lettuce, and then more turkey and then some of the pancetta. Schmear mayo on the third challah slice and top off the sandwich. Use a toothpick to skewer the layers together. Repeat with the remaining ingredients.

½ teaspoon lemon juice

4 croissants, split
