24 ounces large raw shrimp, peeled and deveined
2 large eggs
1 cup buttermilk (or milk)
1/2 tsp. kosher salt
1/2 tsp. black pepper
1 1/2 cups all-purpose flour
1 cup cornmeal
2 tsp. kosher salt
1/2 tsp. black pepper
2 tsp. garlic powder
2 tsp. onion powder
1 tsp. cayenne pepper
3/4 cup mayo
1/2 cup sweet chili sauce

Steps:

  • Heat 1/2-inch of oil in a large, heavy-bottomed skillet over medium heat. Line a large plate with a paper towel, set aside.
  • In a cake pan or pie plate whisk together eggs and buttermilk. Add 1/2 teaspoon of salt and pepper.
  • In another cake pan, mix together the flour, cornmeal, salt, pepper, garlic powder, onion powder, and cayenne pepper.
  • Add shrimp to the egg mixture and coat well. A few at a time, add the shrimp to the flour and coat completely. Place on a clean plate while you bread the remaining shrimp.
  • Add shrimp to skillet making sure not to overcrowd the pan. Fry for 3 minutes, until crispy and golden brown. Drain on prepared plate. Continue until all shrimp is fried.

1 cup milk
1 cup buttermilk
1 cup hot sauce
2 cups self rising flour
1/4 cup self rising cornmeal
2 tablespoons coarse ground black pepper
3 tablespoons salt
2 lbs medium peeled and deveined with tails left on shrimp
for frying peanut oil

Steps:

  • Preheat oil to 375 °F.
  • Line a baking tray with paper towels and set aside. In a shallow baking dish, whisk together milk, buttermilk and hot sauce. In a separate shallow baking dish, whisk together flour, cornmeal, pepper and salt. Make sure your shrimp are dry and dredge in the dry mixture first, then wet mixture and finally the dry mixture again. Shake off excess between each dredging.
  • Deep-fry in batches, but do not overload the fryer. Fry for 2 minutes or until golden brown. Remove from oil with a slotted spoon and drain on the paper towel lined baking tray. Serve warm.

10 eggs, hard-boiled, peeled
saltine crackers (3 tubes or 3/4 box)
5 stalks celery

2 small bell peppers, seeded
1 (4 ounce) jar pimientos
1 (2 ounce) can anchovy fillets
1 large onion

1/2 cup cornstarch
1/2 cup all-purpose flour
3 large eggs
1 cup panko breadcrumbs
1/2 cup seasoned breadcrumbs
1 1/2 pounds peeled and deveined jumbo shrimp, butterflied
Vegetable oil, for shallow frying
Kosher salt and freshly ground black pepper
Cocktail Sauce, recipe follows
2 cups ketchup
2 heaping tablespoons prepared horseradish

Steps:

  • Combine the cornstarch and flour in one bowl, then beat the eggs and 1/2 cup water in a second bowl. In a third bowl, combine the panko and seasoned breadcrumbs. Bread the shrimp by dipping them first in the flour mix, then the egg wash, then the breadcrumbs.
  • Heat about 1/2 inch of oil in a nonstick skillet over medium heat to 350 degrees F.

1 pint mayonnaise (ie Hellmann's)
1 medium onion
1/4 cup pimento-stuffed green olives
1 garlic clove
1 cup sweet pickle relish (ie Del Monte, or less to taste)
3 -5 jalapeno peppers
2 ounces pimientos
25 Ritz crackers
5 saltine crackers
1/16 teaspoon curry powder

Steps:

  • Drain sweet pickle relish and pimentos.
  • Put saltines and Ritz crackers in a plastic bag and crush until fine with a rolling pin.
  • Put onions, garlic, olives, and jalapenos in food processor and chop until fine.
  • Add pickle relish and pimentos and chop.
  • Stir vegetables into mayonnaise.
  • Gently fold in crushed crackers.

1 teaspoon dried thyme
1/8 teaspoon allspice
1 teaspoon freshly-ground white pepper
1/4 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 tablespoon chili powder plus
1 teaspoon chili powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
3/4 cup brown sugar - (packed)
1/2 teaspoon dried red pepper flakes
1/2 teaspoon dry mustard
HERB BUTTER:
1/2 cup softened butter - (1 stick)
2 tablespoons chopped parsley
3/4 teaspoon fresh thyme
1/2 teaspoon fresh tarragon
SHRIMP:
10 large shrimp - (to 12)
1/4 cup Barbecue Spice (listed above)
3 tablespoons olive oil
2 teaspoons chopped garlic
1 1/2 ounces Sherry
1 1/2 ounces apple cider vinegar
1/2 cup tomato juice
1 plum tomato chopped
Juice of 1/2 lemon
3 tablespoons chopped green onions
2 tablespoons Herb Butter (listed above)
2 sourdough baguettes halves, and cut into 6" pieces

  • For the Barbecue Spice: Combine the salt, paprika, thyme, allspice, white pepper, cumin, onion powder, garlic powder, chili powder, cayenne pepper, oregano, brown sugar, red pepper flakes and mustard in a small bowl. This will keep indefinitely in a small, tightly sealed container. (Makes 1 cup) For the Herb Butter: Grind the butter, parsley, thyme and tarragon in a food processor and set aside. For the Shrimp: Combine the shrimp and Barbecue Spice in a resealable plastic bag or bowl and set aside to marinate for a couple of minutes.
