1 (12-ounce) package (2 cups) white baking chips
1 cup flaked coconut, toasted, if desired
3/4 cup macadamia nuts or walnuts, chopped

Steps:

  • Heat oven to 375°F.
  • Combine flour, baking powder, baking soda and salt in bowl.
  • Combine butter, brown sugar, sugar and vanilla in another bowl. Beat at high speed, scraping bowl often, 1-2 minutes until creamy. Add egg; beat 1-2 minutes until well mixed. Beat on low speed, gradually adding flour mixture and beating well after each addition, 1-2 minutes until well mixed. Stir in chips, coconut and nuts.

The key to making them so chewy is using only dark brown sugar and skipping the granulated stuff altogether. The molasses in brown sugar gives the cookies the most ideal chewiness and just the right amount of sweetness.

1 1/2 teaspoons kosher salt
1 teaspoon baking powder
1 teaspoon baking soda

One 12-ounce bag semisweet chocolate chunks or chips
