KALE AND RICOTTA SALATA SALAD

Kale and Ricotta Salata Salad image

This sharp and refreshing salad takes only minutes to put together but is a crowd-pleaser of the first order. This dish would be equally at home at a potluck or as a first course at a dinner party, and no one has to know that you didn't work for hours on it.

Time 10m

Yield 4 servings

Number Of Ingredients 6

1 bunch of Tuscan (lacinato) kale
1 big shallot, chopped fine
The juice of a lemon (preferably Meyer), about 2 two tablespoons
Salt and pepper
1/4 cup of olive oil, or more
1 cup ricotta salata, coarsely shredded

Steps:

  • Trim the leaves of the kale above where the stems become thick. (You're going to eat this raw; steam the stems for another use if you like.) Stack the leaves in a pile, roll them like a cigar, and slice it thin crosswise.
  • Mix together the shallot, lemon juice, salt (go easy on this at first since the cheese is salty), and oil; taste and add more oil if you like.
  • Toss the dressing with the kale and ricotta salata, taste and adjust seasoning, and serve.

LACINATO KALE SALAD WITH DRIED CRANBERRIES AND WALNUTS

Lacinato Kale Salad With Dried Cranberries and Walnuts image

Another delicious Anna Thomas recipe. It's strongly recommended to use Lacinato kale (also known as dinosaur, black or Tuscan) in this recipe and not standard kale. Also, I tried myzithra cheese in the salad and used very little sea salt.

Time 30m

Yield 12 cups

Number Of Ingredients 12

1/2 cup dried cranberries
1/2 lb dinosaur kale (1 large bunch) or 1/2 lb any young kale (1 large bunch)
3 ounces arugula (about 4 cups) or 3 ounces baby mizuna (about 4 cups)
1/3 cup kalamata olives or 1/3 cup other cured olive
1/2 cup chopped walnuts or 1/2 cup pine nuts, lightly toasted
1 small red sweet bell pepper
1 tablespoon olive oil
1 tablespoon walnut oil
2 tablespoons aged balsamic vinegar, plus more to taste
sea salt, to taste
fresh ground black pepper, to taste
1/4 lb blue cheese, feta cheese (optional) or 1/4 lb sharp cheddar cheese, crumbled, to garnish (optional)

Steps:

  • Toast the nuts lightly in a dry pan over low heat, stirring until they begin to turn golden and release their toasted fragrance. Set aside to cool.
  • Pour about 1/2 cup boiling water over the cranberries and leave them to soften until you are ready to toss into the salad, at least 15 minutes.
  • Meanwhile, wash and dry the kale, slice away the stems and discard them. Stack the greens and roll them into tight bundles, then slice very thinly with a sharp knife; you're aiming for a shredded look. You should have about 6 cups of shredded kale, which will shrink quite a bit the moment it is tossed with the oil and vinegar. Place the kale in a large bowl.
  • Wash and dry the arugula, cut off any tough-looking stems and cut it in short pieces. Toss the arugula with the kale.
  • Slice the olives off their pits/stones and cut them in slivers. Core and seed the red pepper, quarter it lengthwise and cut it in matchsticks. Toss the olives, nuts and pepper with the kale.
  • Drain the cranberries, then toss with the kale. Toss in the olive and walnut oils, the vinegar, sea salt and pepper. Taste the salad and correct the seasoning with a touch more salt or a drop of vinegar if it's needed; how much salt you need will depend on how salty the olives are. Just before serving, add the crumbled cheese if you like.
  • This salad keeps well for a day or so, though it will become softer as it sits. Because it is sturdy, it can travel to a picnic or a potluck.

TUSCAN KALE SALAD

Tuscan Kale Salad image

Kale salad may someday go the way of other clichéd salads of yore - the bean salad, the chef's salad, the beet salad with goat cheese. But like all those other venerable mixtures, its ubiquity is due in large part to how good it can be. Take a bunch of raw Tuscan kale (also called lacinato or black kale), which is more delicate than other varieties, and slice it into ribbons. Toss those ribbons with a thick bright dressing of garlic paste, pecorino, lemon juice, olive oil and a pinch of red pepper flakes. Top with freshly toasted bread crumbs and a flurry of pecorino. The leaves are sturdy enough to stand up to the bold flavors and varying textures, but tender when you take a bite.

Time 20m

Yield 2 to 4 servings

Number Of Ingredients 9

1 bunch Tuscan kale (also known as black or lacinato kale)
1 thin slice country bread (part whole-wheat or rye is nice), or 1/4 cup homemade bread crumbs (coarse)
1/2 garlic clove, finely chopped
1/4 cup finely grated pecorino cheese, more for garnish
3 tablespoons extra virgin olive oil, more for garnish
Freshly squeezed juice of 1 lemon
1/4 teaspoon kosher salt
1/8 teaspoon red pepper flakes
Freshly ground black pepper, to taste

Steps:

  • Trim bottom 2 inches off kale stems and discard. Slice kale, including ribs, into 3/4-inch-wide ribbons. You should have 4 to 5 cups. Place kale in a large bowl.
  • If using bread, toast it until golden on both sides. Tear it into small pieces and grind in a food processor until mixture forms coarse crumbs.
  • Using a mortar and pestle, or with the back of a knife, pound garlic into a paste. Transfer garlic to a small bowl. Add 1/4 cup cheese, 3 tablespoons oil, lemon juice, salt, pepper flakes and black pepper, and whisk to combine. Pour dressing over kale and toss very well to thoroughly combine (dressing will be thick and need lots of tossing to coat leaves).
  • Let salad sit for 5 minutes, then serve topped with bread crumbs, additional cheese and a drizzle of oil.

Tips:

  • Choose young, tender kale for the best flavor and texture.
  • Remove the tough center ribs from the kale leaves before chopping.
  • Massage the kale with olive oil and salt to help break down the fibers and make it more tender.
  • Use a light hand when dressing the salad so as not to overpower the delicate flavors of the kale and ricotta salata.
  • Serve the salad immediately or chill it for up to 2 hours before serving.

Conclusion:

This lacinato kale and ricotta salata salad is a delicious and healthy way to enjoy these two seasonal ingredients. The kale is packed with nutrients and the ricotta salata adds a creamy, salty flavor. This salad is perfect for a light lunch or dinner, and it can also be served as a side dish.
