SPICY STICKY LAMB CHOPS

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 13

1 1/2 teaspoons coriander seeds
1 1/2 teaspoons fennel seeds
1/4 cup plain yogurt
1/4 cup tomato paste
4 teaspoons finely grated ginger
4 teaspoons minced garlic
1/2 teaspoon hot sauce (or as much hot sauce as you like. I like it mild, so you may want more) (recommended: Sriracha)
2 teaspoons light brown sugar
2 teaspoons kosher salt
Freshly ground black pepper
1 teaspoon apple cider vinegar
4 teaspoons vegetable or canola oil
8 (1 1/4-inch thick) lamb loin chops

Steps:

  • Preheat the oven to 475 degrees F.
  • Toast the coriander and fennel seeds in small pan over a medium flame, shaking every 30 seconds so they don't burn. Once they've given off a lovely aroma and have turned a darker tone, remove from the hot pan and cool completely on a plate. Then throw them into your spice grinder and grind to a fine powder.
  • Mix the spices with the yogurt, tomato paste, ginger, garlic, hot sauce, brown sugar, salt, a healthy few grinds of freshly ground black pepper, apple cider vinegar, and oil. Taste and season according to your palate.
  • Cover each chop with the marinade, rubbing it into the meat and fat. You can marinate overnight, a few hours, or just 30 minutes. I've done all three and it tastes great every way.
  • Bake the chops in a 9- by 13-inch baking dish until the lamb is cooked to medium-rare, or to your liking, 15 to 20 minutes. Remove from the oven and allow to rest, tented with foil, for about 5 minutes before serving.

Categories     dinner, main course

Time 55m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons unsalted butter
1 small onion, peeled and chopped
1 clove garlic, peeled and minced
2 tablespoons Champagne- or white-wine vinegar
1 cup low-sodium chicken broth
3/4 cup frozen baby peas, defrosted
1/2 pound small leaf spinach, stemmed, washed, well-dried and coarsely chopped
Salt and freshly ground black pepper to taste
2 tablespoons olive oil
8 rib lamb chops, well-trimmed and patted dry
Salt and freshly ground black pepper to taste

Steps:

  • For the sauce, melt butter in a heavy large saucepan over medium-low heat. Add onion, then cover and cook until translucent, about 10 minutes, stirring occasionally. Add the garlic and vinegar. Boil until reduced to a glaze. Add 1/2 cup of the chicken broth and boil until reduced by half.
  • Place the peas and remaining 1/2 cup chicken broth in a blender and blend until smooth. Add onion mixture and blend until smooth, stopping to scrape the sides of the jar. Strain through a fine sieve into a clean saucepan. (Can be prepared ahead, then covered and refrigerated.)
  • For the lamb, preheat oven to 425 degrees. Place a heavy, large, oven-proof nonstick or cast-iron skillet over medium-high heat until hot. Coat skillet with olive oil. Add lamb chops and quickly brown on both sides. Place skillet in oven and bake until just firm to the touch, about 5 minutes for medium-rare. Season with salt and pepper.
  • Meanwhile, rewarm sauce over medium heat. Add spinach and stir until wilted, about 3 minutes. Season with salt and pepper. Ladle some sauce into the center of 4 plates. Place 2 lamb chops in center of each plate. Serve immediately.

SPICY LAMB AND PEANUT STEW

Spicy Lamb and Peanut Stew image

Provided by Sabine Broeck-Sallah

Categories     Lamb     Stew     Bon Appétit     Massachusetts

Yield Serves 8

Number Of Ingredients 13

2 tablespoons peanut oil
1 3/4 pounds lamb shoulder, trimmed, cut into 1-inch cubes
2 large onions, coarsely chopped
1 6-ounce can tomato paste
3 bay leaves
1/4 teaspoon cayenne pepper
1 3/4 cups beef stock or canned beef broth
1 3/4 cups water
3/4 cup old-fashioned style or freshly ground peanut butter
1 cup diced carrots
4 jalapeño or 2 habañero chilies, halved, seeded
1 cup frozen peas
Cooked rice

Steps:

  • Heat oil in heavy large saucepan or Dutch oven over medium-high heat. Add lamb and onions and cook until lamb is brown, stirring occasionally, about 6 minutes. Mix in tomato paste, bay leaves and cayenne pepper and cook 1 minute. Season with salt and pepper. Add beef stock and water and bring to boil. Simmer until lamb is tender, about 1 hour 20 minutes.
  • Stir peanut butter, carrots and jalapeños into stew and cook until carrots are tender, about 30 minutes. Add peas and cook until heated through. Discard jalapeños. Serve stew over rice.

Tips:

  • To ensure the lamb chops are cooked evenly, use a meat thermometer to check the internal temperature. The chops should be cooked to an internal temperature of 145°F (63°C) for medium-rare, 150°F (66°C) for medium, or 160°F (71°C) for medium-well.
  • If you don't have a meat thermometer, you can check the doneness of the lamb chops by cutting into one. The meat should be slightly pink in the center for medium-rare, slightly less pink for medium, and brown throughout for medium-well.
  • Be sure to rest the lamb chops for a few minutes before slicing and serving. This allows the juices to redistribute throughout the meat, resulting in a more tender and flavorful chop.
  • To make the spicy peanut sauce, use a high-quality peanut butter. This will give the sauce a richer flavor and creamier texture.
  • If you don't have Sriracha sauce, you can use another hot sauce of your choice. However, Sriracha sauce has a unique flavor that pairs well with the peanut sauce.
  • If you're serving the lamb chops with rice, be sure to cook the rice according to the package directions.

Conclusion:

Lamb chops with spicy peanut sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The lamb chops are cooked to perfection and the spicy peanut sauce is the perfect complement. Serve with rice and a side of vegetables for a complete meal.
