1/2 cup olive oil
1 cup sugar
1 (15 ounce) can pumpkin
1 teaspoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon rumsford baking powder
1 pinch cardamom
1 pinch coriander

Steps:

  • Pour oil in mixing bowl.
  • Add sugar and pumpkin; mix well.
  • Add vanilla, flour, salt, baking powder, cardamon, coriander; mix well.
  • Bake for 375 degrees F.
