Yield Makes 1 3/4 cups

Number Of Ingredients 7

1 10-ounce cucumber, peeled and seeded
1 cup yogurt
1/4 cup freshly chopped mint leaves
Juice of 1 lime (2 tablespoons)
1 teaspoon coarse salt
1 tablespoon canola oil
1 tablespoon black mustard seeds

Steps:

  • Cut cucumber into 1/4-inch dice. Transfer to a bowl; add yogurt, mint, lime juice, and salt. Stir to combine. Heat a skillet over medium heat; add oil. When very hot, add mustard seeds; cook until they pop. Add to yogurt mixture; stir to combine.

Tips:

  • Choose the right lamb: Use a combination of ground lamb shoulder and ground lamb leg for the best flavor and texture.
  • Season the lamb well: Don't be afraid to use plenty of spices and herbs to flavor the lamb. Cumin, coriander, paprika, and garlic are all great choices.
  • Chill the lamb mixture before cooking: This will help the koftas hold their shape better when cooking.
  • Cook the koftas over medium heat: This will help prevent them from burning on the outside while still cooking through on the inside.
  • Don't overcook the koftas: They should be cooked through but still slightly pink in the center.
  • Serve the koftas with your favorite dipping sauce: Tzatziki, hummus, or yogurt sauce are all great options.
