Time 40m

Number Of Ingredients 18

FOR THE MEATBALLS
1 lb ground lamb
2 clove garlic minced
1 Tbsp grated ginger
1 medium shallot minced
1 jalapeno or other green chili seeded and chopped
1/4 c desiccated coconut
CURRY SAUCE
1 Tbsp olive oil
1 large shallot diced
1 Tbsp garam masala
1 tsp each ground coriander and turmeric
1/2 tsp fenugreek powder
3 Tbsp brown sugar
28 oz can crushed tomatoes
1/2 c coconut yogurt at room temp
fresh cilantro chopped
basmati rice and naan to serve

Steps:

  • 1. Place all the ingredients for the meatballs in a bowl and mix with hands until well incorporated. Roll into about 16 balls and set aside in fridge.
  • 2. Heat the oil in a large skillet. Add the shallot and cook for about 5 minutes. Add the spices, brown sugar and tomatoes. Bring to a boil. Add in the meatballs and reduce the heat to a simmer. If it looks a little thick add some water. Simmer for 15 minutes. Stir in the yogurt and cook about 5 more minutes.
  • 3. Serve with basmati rice and naan and garnish with cilantro

Tips:

  • Mise en Place: Before you start cooking, make sure you have all of your ingredients prepped and measured. This will help you stay organized and ensure that you don't forget anything.
  • Use Fresh Ingredients: Fresh ingredients will always yield the best results. If possible, try to use organic or locally-sourced ingredients.
  • Don't Overcook the Meatballs: Lamb meatballs are best when they are cooked through but still tender and juicy. Overcooking will make them tough and dry.
  • Use a Good Quality Curry Paste: The curry paste is what gives this dish its flavor, so it's important to use a good quality brand. Look for a paste that is made with fresh ingredients and has a rich, flavorful aroma.
  • Simmer the Curry: Simmering the curry allows the flavors to meld and develop. Be patient and let the curry simmer for at least 30 minutes, or even longer if you have time.

Conclusion:

Lamb Meatball Curry is a delicious and easy-to-make dish that is perfect for a weeknight meal. The meatballs are tender and flavorful, and the curry sauce is rich and creamy. Serve it with rice or naan bread for a complete meal.
